    This chipotle chukauni is the high protien upgraded version of the traditional chukauni that you can serve as a meal or as a side with smoky, spicy, creamy flavors and crunchy textures. This easy recipe is a keeper!

    Why this chipotle chukauni?

    This chipotle chukauni is the fusion of the traditional Nepali Chukauniwith Indian and Mexican cuisines. This chipotle chukauni gives the same traditional comfort but with modern flavors!

    This is protein packed! And comforting! The yogurt, paneer, pinto beans, cashews all add to the protein and nutrient base. While the veggies add the texture crunch and fiber along with micronutrients. Simple and nutrient dense is this chipotle chukauni!

    This is a well balanced easy dish. It is creamy, tangy, smoky, and slightly earthy. The yogurt gives cooling creaminess, while chipotle adds heat and smokiness. The herbs give a flavor boost while the corn and mango add a slight sweet hint. To sum it up, it is just a delicious medley of flavors all in one bowl.

    This dish is very adaptable and versatile. You can serve this as It works as a dip or filling for the pita or a crusty toasted bread; as a side dish with roti or rice; as a salad, and as a light meal. Additionally, play around with the veggies that you have on hand. Adjust the chipotle peppers as oper you spice level requirements.

    Ingredients

    To make this comforting and delicious chipotle chukauni, you will require the following ingredients:

    Yogurt - gives the creamy base while adding probiics, protein, and calcium. You can use homemade or store-bought yogurt.

    Salt - gives flavor

    Chipotle peppers - adds the smoky, spicy heat characteristic of many Mexican recipes. Adjust the quantity as per your heat tolerance.

    Pinto beans - enhances the protein anf fiber profile of this dish while adding Mexican flavors.

    Veggies - cabbage, carrots, cucumber, corn, onion give a crunchy texture to the salad and enhancing the micronutrients and fiber.

    Herbs - cilantro and mint add characteristic Indian and Nepali flavors. Add a dash of crushed oregano to enhance the Mexican flavor profile.

    Paneer - protein and calcuim rich semi soft cheese which is widely used in Indian and Nepali cuisine.

    Turmeric - characterictic natural colorant in Indian and Nepali cuisine. It adds immunity too.

    Mustard oil - enhances the depth of flavor

    Fenugreek - has a slight bitterness adding to flavor depth profile of this dish

    Cashews - adds a crunchy texture as well as proteins. Swap with your favorite nut.

    Serving Suggestions

    This chipotle chukauni is a meal by itself. This is great for summer as there is not much cooking involved other than the tempering alone. This is our quick snack or easy lunch during hot summer days.

    You can also serve this with cooked grains or flatbreads too. Add it your summer grilling as a delicious side.

    Storage

    Since this chipotle chukauni is a yogurt based dish, I recommend storing it in the refrigerator to retain its freshness. You can stire leftovers, if any for a day or two. Betond that, it will be tasty but the veggies might loose their crisp texture.

    If you are planning to meal prep this, you can have the veggie, bean, panner mixture in a separate bowl. Add the tempering, chipotle pears, salt, and turmeric to yogurt whisk and keep. Mix in portions when needed for that comforting texture and flavor all throughout the week.

    Ingredients

    • 3 cups Yogurt
    • 1 cup Pinto beans Cooked, drained
    • 1 cup Paneer ¼ inch cubes
    • ½ cup Cabbage thinly shredded
    • ½ cup Carrots Shredded
    • ½ cup Corn
    • ¼ cup Cilantro finely chopped
    • 2-3 tbsp Mint finely chopped
    • ½ cup Onions thinly sliced
    • 4-7 chipotle peppers with sauce chopped
    • ½ cup Cucumber diced
    • ⅓ cup Mango Semi ripe, cubed
    • ¾ tsp Salt

    Tempering

    • 4 tbsp Mustard oil
    • 15 Cashews halved
    • ¼ tsp Fenugreek seeds

    Instructions

    • Add the yogurt followed by all the veggies and chipotle peppers to a bowl. Add salt and turmeric.
    • Heat oil in a pan. Add the fenugreek seeds and cashews fry for a minute until golden. Pour it into the yogurt veggie bowl.
    • Mix thouroghly, adjust salt as per taste. Transfer to serving bowls and serve chilled or at room temperature.

      Great to learn about Chipotle Chukauni, a variation of the classic Nepali Chukauni. I’d love to try it—especially since it’s a healthy recipe and has a slight resemblance to vegetable raita. Fenugreek seed tempering must have given a good flavor.
