      These spicy onion swirls are the perfect balance of soft and fluffy bread with a bold, savory filling of caramelized onions and spices inspired by the street food, onion samosas. The balance of sweet onions with the spices, fennel and cayenne, makes this roll quite addictive. 

      About these onion swirls

      The combination of sweet, savory onions, warming spices, and creamy cheese creates a filling that's packed with flavor in every bite. Especially, the fennel gives the characteristic flavor of the Indian onion samosa. That flavor is so addictive and this roll is inspired by that flavor profile after the onion puff. If you love onions and bread, these rolls are for you!

      The dough is enriched with Greek yogurt, giving it an incredibly tender crumb and a subtle tang that complements the rich flavors inside. The tangzhong also adds to the softness of the bread.

      Every slice reveals a delicious filling of caramelized onions, aromatic spices, and just the right amount of cream cheese, which adds a smooth, creamy texture that balances the gentle heat without overpowering it.

      Ingredients

      To make these onion swirls, you will need the following ingredients:

      All purpose flour - forms the base structure of the bread.

      Milk and Greek yogurt - add to the softness of the rolls. These also add proteins and calcium enriching the nutriwnt profile.

      Butter - provides a tender crumb and adds flavors.

      Salt - gives flavor.

      Sugar - to activate the yeast

      Active dry yeast - Leavens the bread. Alternatively, you can use instant yeast. In that case, skip the yeast activation step.

      Onion - The sweet caramelized onions provide multitude layers of flavors along with fennel. This recipe uses red onions whic also add a punchy flavor. You can substitute it with yellow or white onions for a milder flavor. Also, you can use finely chopped onions instead of thinly sliced ones, rolling or shaping the individual swirls will be easier.

      Spices - cayenne, turmeric and fennel add to the flacor profile of these rolls. these rolls are spicy, adjust the cayenne as per your taste and to balance the caramelized onions.

      Oil - to cook the onions.

      Garlic butter - this is optional. I recommend spreading a little of garlic cilantro butter as soon as the rolls are out of the oven. This enhances the flavors.

      Cream cheese - balances the flavors of caramelized and spicy onion filling in the bread.

      Cilantro - boosts aroma and flavor.

      Serving Suggestions

      These onion swirls are perfect to serve for breakfast or for teatime. A soft roll with a cup of coffee or tea provides so much of comfort. You can serve this for any occassion.

      Storage

      I store any leftovers in the refrigerator. When needed, microwave in 7second blitzes until it is warm and soft. Or warm in an oven.

      Onion Swirls

      These spicy onion swirls are the perfect balance of soft and fluffy bread with a bold, savory filling of caramelized onions and spices.

      Servings: 12 rolls

      Ingredients

      For the Tangzhong

      • 5 tsp All purpose flour
      • ⅙ cup Milk
      • ⅙ cup Water

      For the Dough

      • ½ cup Milk warm
      • 2¼ tsp Active dry yeast
      • 1 tsp Sugar
      • 4 tbsp Butter
      • Tangzhong from above
      • 2¾ cups All purpose flour
      • 1½ tsp Salt

      For the Filling

      • 1½ Recipe Onion filling (recipe here)
      • 4 tbsp Cream cheese room temperature
      • 3 tbsp Cilantro finely chopped

      For finishing

      • 1 tbsp Garlic herb butter

      Instructions

      • To make the tangzhong, mix thoroghly the flour, milk, and water. Cook on a low medium flame until the mixture thickens.
      • Activate the yeast with sugar and warm milk. Skip this step if using instant yeast.
      • Add the tangzhong and the ingredients for the dough into the bread machine, set the cycle to knead dough. Alteratively, you can knead the dough manually. prove the dough until it doubles about one to one and a half hour.
      • In the meantime, heat oil, add fennel seeds followed by sliced onions, cook for 6 minutes. Add the salt and turmeric, stir and sauté for another 7-8 mins. Add the cayenne, cook for 2-3 minutes. Cool the mixture.
      • Punch and knead the dough. Roll it into a 16x12 rectangle. Spread the cream cheese venly followed by the onion mixture. Cut into 12 one and half inch strips along the shorter side.
      • Coil each strip and place in a buttered 9x13 or 9x9 baking dish. Cover and let it prove for about 45 minutes. Preheat the oven at 375℉.
      • Bake for 23-24 minutes until the bottom sounds hollow. Remove from the oven and brush with garlic butter. Cool
      • Serve warm with soup, salad, coffee, tea, or as such.
