    This irresistible, bold, and flavorful Nepalese chukauni is simple to make, yet tasty and comforting potato salad. Serve this as such, or with rice, bare, roti/paratha.

    This savory potato salad with bold flavors is side dish from western regions of Nepal. Protein rich and creamy yogurt, meaty potatoes, and crunch from the onion give this dish a medley of addictive textures and flavors. This simple potato salad is made by mixing everything and then adding the fenugreek tempering in mustard oil at the end. Period. SO simple to make. Serve this for your next summer cookout.

    Why I love this Chukauni?

    First and foremost reason, it is simple to make! The more easier to make, you'll make the dish often. This recipe falls in that category. And you don't require fancy equipments to make this delicious salad.

    Second, you can make it with simple pantry essentials. Potatoes and yogurt are staples in any kitchen and hence this chukauni is an option always!

    Third, yogurt is rich in protein and calcium. This boosts the nutrition profile while meaty potatoes add to the comfort bite.

    Finally, the flavors in this simple dish is phenomenal. The tang from the lemon, tartness of yogurt, spicy heat from the red chili powder and Thai chilies, and the aromatic spices makes this number one choice.

    Plus, you can customize this recipe easily. Adjust the heat as per your tolerance. Make it think or a thick salad as you can modify the yogurt quantity.

    What ingredients are required to make this Nepalese potato salad?

    Potatoes - This recipe uses Gold potatoes. I have made it with Russet potatoes and it works too.

    Yogurt - Fresh yogurt works great. Though homemade yogurt is the base in this recipe, you may swap with store bought yogurt too.

    Turmeric - Adds a vibrant color and boosts immunity.

    Salt - Gives flavor.

    Lemon juice - Adds a bold citrusy flavor and balances the spicy heat.

    Red chili powder - this adds to the spicy kick as well as color. You may reduce the quantity if you want a milder version.

    Onion - Adds a crunch, aroma, and flavor to the salad.

    Mustard Oil - Thsi gives a pungent and earthy flavor. You may substitute with any oil if you do not have this.

    Fenugreek - Adds earthiness as well as tiny bit of bitterness.

    Thai chili pepper - Boosts the heat. Adjust the quantity as per requirement.

    Cilantro/green onion - Cilantro or green onions may be used as a garnish.

    There are as many minor variations in chukauni recipe. Every home has its own spin on it. Whatever the minor additions made, it results in a delicious potato salad that your family will love guaranteed. Add ginger or cumin or mustard in the recipe which are some popular modifications.

    Storage

    Since this recipe uses yogurt, the tartness of the yogurt will increase if left outside. You may kleave it outside for a couple of hours if you are using it the same day. However, refrigerating it extends not only the shelf-life but also the flavors. The ingredients marry well during the refrigerated time and makes a delicious salad.

    You may store this in the refrigerator for 4-5 days. Take it out and serve when needed. Serve this cold or at room temperature based on your preference.

    Can this be made ahead?

    Yes, this Nepalese potato salad works great as a make ahead recipe. You make this a day before if you are planning to feed a crowd, speaking of which this is a crowd pleaser. An easy winner side.

    Serving Suggestions

    Serve chukauni aka potato salad as a great side. Though this can be had as such, it pairs well with rice or roti to make a satisfying and easy meal option for the family. You may serve this with Nepalese Bara, panfried lentil cakes.

    About the group

    For this month is our Shhh! Secretly Cooking challenge group Mayuri Ji of Mayuri's Jikoni suggested the theme "Dairy". She suggested Onion and oil as secret ingredients. With endless recipes to share for the dairy theme with the given secret ingredients, I settled with this trending Chukauni as this is absolutely easy t make during this summer without spending much time in active cooking. Plus, the family loved it so much and is customizable too.

    In turn, she made this delicious Dahi Sago using the secret ingredients chili and ginger that I suggested. By the way, have you tried her Makhana Trail Mix? I love that simple and healthy snack.

    Ingredients

    • 1½-2 Cups Yogurt
    • 200 g Potatoes cooked, peeled, cubed
    • 1½ tsp Salt
    • 1 tbsp Lemon juice
    • 1½ tsp Red chili powder
    • 1 tsp Turmeric
    • 2 Thai chili Chopped
    • 3-4 tbsp Mustard oil
    • ¼ tsp Fenugreek
    • ½ Cup Onion thnly sliced
    • 1-2 tbsp Cilantro/green onions chopped

    Instructions

    • Whisk the curd

    • Add the cubed potatoes, salt, onion, Thai chili, salt, turmeric, and red chili powder followed by whisked curd to a bowl.

    • Heat oil in a pan. When it is hot add the fenugreek and fry for 30 seconds. Pour it to the potato-yogurt mixture.
