This unique fruit platter is one among the "rainbow theme" fruit platter series and this platter features the yellow orange colored fruits. Every fruit has its own unique flavor and color. Though they belong to more generalized color, they differ in their hue creating a wonderful visual appeal.

Ingredients
You will need the following to make this incredibly delicious "sun"sational sunshie platter:
Fruits - Yellow peaches and nectarine, Bing cherries, apricots, mango, jackfruit, pineapple, orange, mandarin, cantaloupe, papaya, yellow apples. However, if you can't find all the fruits in this recipe, you can substitue with some yellow or orange colored fruits that it available in our region.
Dressing - For the sensational flavors of this fruit salad, this recipe uses yellow and orange color fruit juices/syrups. The dressing consists of lemon juice, passionfruit juice, saffron syrup and sarsaparilla syrups. These build the uinque flavor profile for this salad dressing. Sarsaparilla syrup is made from the root of sarsaparilla plant and you can find this syrup in Indian stores which is the one to make this refreshing drink, Nannari Syrup. If you can't find one, you could use more of saffron syrup or even honey.
Ginger - this rhizome has a spicy punch flavor that uplifts the dressing and the fruit flavors. This is not to be skipped at all.
Mint - The perfect herb that balances all the fruits.
Orange and Lemon zest - the zest from orange and lemon boosts with great aroma and flavors.
Serving Suggestions
This recipe easily serves four to six as a dessert. If you are thinking about a healthy fruit bowl meal, then this would be great for two. Depending on your requirement, you can easily scale up or scale down this recipe. In addition, you can adjust the quantity of fruits based on the type of fruit that you have.
Whether it is inddor or outdoor event, this sensational sunshine platter is fit for any occasion. This dessert fruit salad is best when you serve it chilled. If you are making it for a big crowd, do keep it on ice tray to enjoy on a hot summer day.
You can also serve this as a fruit platter or in smaller dessert cups. If you choose the latter, mix the dressing and scoop the fruit salad into small dessert cups for your guests.
Storage
If you have any leftovers, this salad can be stored in the fridge for a couple of days. When needed you can serve it straight from the fridge.

"Sun"sational Sunshine Platter
Ingredients
- 1 Yellow Nectarne cut into wedges
- 1 Navel Orange cut into halfmoon slices
- 1-2 Mandarin or cutie orange peeled
- ½ Yellow/golden apple cut into wedges
- 1 Yellow Peach cut into wedges
- 1 Apricot cut into wedges
- 1 Mango sliced
- ⅛ Pineapple cut into wedges
- ⅛ Cantaloupe cut into wedges
- 8 pieces Jackfruit
- a few Yellow Cherries
Dressing
- 2 tbsp Passion fruit juice
- 2 tbsp Saffron Syrup
- 2 tbsp Sarasaparilla/nannari syrup
- 1/4 tsp Orange zest
- 1/4 tsp Lemon zest
- 1/2 tsp Lemon juice
- 2 tbsp Mint
- 1/2 tsp Ginger
Instructions
- To a bowl, add all the ingredients listed under "dressing". Whisk to mix well.
- Arrange the fruits in an attractive pattern that you like. Drizzle the dressing.
- Garnish with mint. Serve chilled.
