    Cilantro Pachadi / Raita

    Cilantro pachadi aka raita is made with cilantro, coconut, and yogurt, spiced with cumin and Thai green chili. 
    Cilantro or kothmalli (in Tamil) in one herb that is extensively used in Indian cuisine. It just brightens up any dish and adds tons of flavors. The aroma that cilantro imparts is amazing. It need not be used as just garnish, but finds itself in sauces, chutneys, and rice too! n spring, the cilantro yield will be very good and every year I try to sow and grow them. They are easy to grow. 
    This cilantro pachadi can be made very quickly. In just five minutes, this will be ready. This is a perfect accompaniment to any rice or parathas. It is often made in our home and we do make it for festive occasions too. It goes perfectly with festive thali platters. The aroma and flavor from cilantro and yogurt perfectly spiced with green chili pepper is the choice for festive meals. This is one raita that I love from my childhood. My mom makes this for me quite often. 
    Also, this can be chilled and served as summer soup too. When you are serving as soup, the following quantity may serve one whereas as a condiment for an Indian food platter, would serve four. Also. increase the Thai pepper as per the spice requirements.

    Ingredients
    Serves 4
    To grind
    Cilantro- 1/4 cup, medium packed
    Coconut - 2 tbsp
    Salt - 1/4tsp
    Curd - 2/3 cup
    Cumin - 1/3 tsp
    Tempering
    Oil - 1 tsp
    Red chilli - 1
    Mustard seeds - 1/4 tsp
    Curry leaf
    Asafetida- 1/8 tsp
    Method
    Add all the ingredients under 'to grind' and grind to a coarse paste. Alternatively a spoon of yogurt can also be added to aid grinding. Add the ground mixture to a bowl. Add salt and yogurt. Mix everything.

    Heat oil in a pan, add the red chili, and mustard seeds. When it splutters add curry leaf and asafetida. Pour it into the raita. Mix and serve.

    Serve with rice, or parathas, or as a chilled soup.
