    Grilled Nectarine and Feta Salad

    The grilled nectarine paired with the perfectly crisp candied walnuts provides the perfect amount of refreshing sweetness along with the mixture of feta and greens for the tang and perfect base! Pair this with the strawberry gochujang dressing, and I guarantee this salad will be on your meal prep list every week!

    Every summer, we look forward to having fresh healthy foods, but it stops being fun after eating the same old garden veggie salad every day for a month. So this time, let's switch it up with this fresh, fruity, spicy, crunchy Grilled nectarine and feta salad that has the perfect freshness that will keep you coming for more servings. And the dressing adds to the perfect punch in flavors complementing the salad. In addition, this salad is a great way to use the season's best nectarines and sweet strawberries.

    The strawberry gochujang dressing

    We  love this Strawberry Gochujang dressing especially with grilled nectarines salad as the combination results in the evolution of a medley of smoky, sweet, spicy, and sharp pungent flavors. This unique flavor combination makes the ultimate summer salad. When you grill outside during summer, this salad is easy to fix for a family as well as a crowd.

    The following ingredients are required:

    Nectarine - Fresh crisp nectarines are best to use as they are grilled. Very ripe ones will get mushy when grilling, so avoid using them.

    Romaine lettuce - Fresh and crisp Romaine lettuce works best.

    Spinach - Baby spinach is a great choice to use in this recipe.

    Candied walnuts - these are my favorite to add to salads. They give a sweet bite as well as crunch and proteins.

    Feta - Crumbly feta with a sharp flavor is a perfect one to pair with fruits.

    Strawberry Gochujang Dressing - This sweet spicy Greek yogurt based dressing works in enhancing the flavor combinations in this salad (Recipe here).

    This salad is so easy to prepare. The nectarines take about 4 minutes of grilling. Whenever you grill, these will be ready in no time when compared to the cooking time taken by other foods. The rest is all adding everything together, which doesn’t take long. They can be prepared earlier when you plan to make this salad for a gathering. Grilling is a great idea as it adds to the smoky flavor but this recipe will work even without grilling.

    Servings

    This recipe makes 4 servings easily when served as a meal. When served as a side this can be good for 8 to 10 servings.

    Ingredients

    Feta cheese - 2 to 3 tbsp, crumbled

    Romaine lettuce - 5 cups

    Baby spinach - 1.5 cups

    Nectarine - 4, cut into 8 wedges

    Candied walnuts - ¾ cup

    Pita chips optional

    Strawberry gochujang dressing - 1 recipe (Here for recipe)

    Method

    Grill the nectarine wedges for two minutes on each side until you see grill marks. This can be adjusted to personal preference.

    Add the lettuce, spinach, grilled nectarines, candied walnuts, and feta to your bowl.

    Drizzle the Strawberry Gochujang dressing as needed.

    Serve immediately.

      I'm going to look at that dressing recipe. I am having a peach/beet salad tonight with walnuts and feta and I think this dressing would be perfect.
