    This herbaceous mint mascarpone dip is a fresh and tasty savory twist on classic mint dip versions with creamy mascarpone and fresh mint with garlic, onion, and a sweet chili oil drizzle.

    Why this mint mascarpone dip?

    When rich, creamy mascarpone meets fresh mint, the result is a vibrant, flavorful dip—balanced with a hint of ginger, garlic, onion and lemon, and finished with a sweet chili oil drizzle for the perfect kick!

    Although this is perfect, creamy, and herbaceous, this is not just a spread or dip. This is versatile to serve with roasted veggies or with entrees. A smear of this dip on flatbreads will be an amazing start for a unique wrap. This will elevate the simple meal you have on your plate.

    You can make this dip with just a few ingredients. It is a quick prep, and it results in an elevated taste making it perfect for summer gatherings, mezze boards, or adding a fresh touch to rich or spicy foods.

    Mascarpone adds a luxurious depth making this dip one of a kind experience unlike your regular yogurt-based mint sauces. You'll get a high end restaraunt style experience at your home in minutes.

    Next, the sauteed onion, fresh garlic, sweet chili oil, and the bright mint, this savory dip is an addictive one.

    The creamy, buttery texture of mascarpone balances beautifully with the brightness of fresh mint and lemon — creating a dip that's light yet indulgent.

    Ingredients

    To make this bright and refreshing dip, you will need the following ingredients:

    Mascarpone cheese - creamy and rich mascarpone cheese gives the buttery taste and texture to the dip

    Mint - brightens and adds refreshing flavor and aroma.

    Mayo - gives body to the dip. This recipe uses vegannaise. You may use the variety of mayo that you prefer.

    Greek yogurt - the tartness balances the creamy flavor of cheese

    Black salt and salt - black salt adds a earthy flavor. You may use Himalayan salt instead.

    Chaat masala - a mixture of spices, this adds a flavor boost.

    Thai chili, black pepper - gives spiciness to the dip

    Sweet chili oil - sweet and spicy, balances the flavor of the dip

    Onion, ginger, garlic - enhances the flavor

    Oil - to saute onions

    Serving Suggestions

    As this is a versatile dip, you can serve this at room temperature or cold, with veggies, chips, or slices of bread. You can also use this as a flatbread spread when you make wraps. Or use it as a sandwich spread.

    Storage

    Leftovers, if any, I store in the refrigerator and serve it when needed with veggies or bread for a quick snack. You may store it for 2-3 days in the refrigerator.

    Ingredients

    • 4 oz Mascarpone cheese
    • 4 tbsp Mayonnaise (regular/vegan)
    • ½ cup Onion chopped
    • 1 tsp Ginger finely chopped
    • 1 tsp garlic finely chopped
    • 1 Thai chili finely chopped
    • ¼ tsp Black salt
    • ¼ tsp Chaat masala
    • ⅛ tsp Salt
    • 2 tsp Lemon juice
    • 1 tsp Oil
    • 2-3 tbsp Sweet chili oil
    • a pinch black pepper
    • ½ tsp Lemon zest
    • 1 tbsp Greek yogurt

    Instructions

    • Heat oil in a pan. Add the onion, ginger, and Thai chili. Saute for 3-4 minutes with a pinch of salt. Remove from the flame.
    • Add the cheese, mayo, lemon juice, sauteed onion, garlic, black salt, chaat masala, and mint. Combine well. Transfer to a bowl.
    • Drizzle with sweet chili oil. Serve with chips, bread, or veggies.
