I love this vegetarian version of lasagna dip, but more importantly I love the idea of substituting lentils for meat in those lasagnas I make for my non-meat eaters.

As a kid, I hated lentils, but now I absolutely love them. Beluga and red are my favorites. I remember the Nile Spice lentil soup cups my mom used to get when I was little. If I had gotten to try something like this, I surely would have loved lentils much earlier! Definitely trying this one out some time with friends!

Lentils give an earthy flavor which kids may not like. Now you can try the lentils in this delicious lasagna dip and the story changes entirely. Thanks Kelly!
