    This pepper and cheese dip is a creamy, smoky, spicy, and savory blend of cheeses and vibrant peppers! It's equally delicious you serve it warm and melty or chilled and spreadable making it ideal for dipping with crackers, bread, chips, tortilla, or crunchy veggies.

    Why this pepper and cheese dip?

    This dip is a perfect flavorful fusion of creamy cheese with the sweet, smoky, or spicy notes of peppers. With its bold and satisfying taste, this dip is a cheeselover's or pepper lover's or snack lover's heaven.

    The tons of cheese add a substantial amount of proteins as well as calcium. If you are looking for a higher protein option, this dip along with fiber rich salad and flatbreads can make a satisfying meal.

    You can serve this dip warm or cold, spicy or mild as it is totally customizable making it a great option for any party or game night or movienights. That ooey gooey cheese effect willl make you want to make this often. Totally irresistible!

    Did I tell you that you can make this dip easily and ahead of time? Yes, with this option and its cheesy, spicy, and smoky flavors, this dip is handy to feed a crowd any time of the year.

    Ingredients

    To make this cheesy dip, make sure to have the following ingredients:

    Poblano peppers - imparts smoky and spicy flavors

    Jalapenos - fresh and pickled - add a jolt of flavors

    Cheese - cream cheese, cottage cheese, parmesan cheese, pepper Jack, Habanero-jalapeno pepper cheddar, paneer - these cheese varieties add to the protein, creamy and spicy flavors as well as the texture of the dip.

    Garlic - enhances flavor

    Herbs - cilantro, parsley, green onions

    Mayo and sour cream - gives a body to the dip adding to the smooth and rich flavors.

    Lime juice - balances flavor

    Honey - with a touch of sweetness, it balances the smoky and spicy peppers

    Salt - gives flavor

    Serving Suggestions

    This dip is versatile that you can serve it warm or cold. I prefer to serve this cold during Summer and make it a warm dip during the winter. You can serve this with sweet peppers, tortilla chips, pita chips, bread, fresh warm tortillas.

    I love the cold dip with sweet peppers. The sweetness of the pepper pairs well with the cold, spicy dip. However, the warm version is super comforting with chips or warm corn tortillas.

    In addition, you can use this in your tacos, tostadas. I often use this to make a snack style cozy meal that the whole family loves.

    Storage

    i store the leftovers in the refrigerator for a couple of days. You can use it in grilled cheese or on tacos for your next meal. Or serve as a wram or cold dip with chips/crunchy veggies.

    Ingredients

    • 3 Poblano pepper
    • 2 tbsp Pickled jalapenos chopped
    • 2 tbsp Jalapenos finely chopped
    • 4 oz Cream cheese
    • ½ cup Cottage cheese
    • 2 cloves Garlic
    • ½ cup Paneer grated
    • ½ cup Habanero jalapeno pepper cheddar grated
    • ½ cup Pepper jack cheese grated
    • 1 cup Mozarella/Oaxaca cheese grated
    • 4 tbsp Parmesan
    • ½ cup Green onion finely sliced
    • ½ cup Mayo
    • ¼ cup Sour cream
    • 2 tbsp Parsley chopped
    • ¼ cup Cilantro finely chopped
    • 1 tbsp Lime juice
    • 1 tbsp Vinegar from pickled jalapeno
    • 1 tsp honey

    Instructions

    • Roast the poblano peppers on flame until it gets charred. Cover and set aside for 15 minutes. Peel and romove the stack and the seeds.
    • To a food processor, add the poblano peppers, garlic, cream cheese, and cottage cheese. Blitz through to get a creamy consistency. Transfer to a bowl.
    • Add the rest of the ingredients and combine thoroughly.
    • Transfer to a serving dish if serving cold.
      If serving warm, transfer to a oven proof serving dish.
    • bake at 350℉ for 18-20 minutes until bubbly. Remove from the oven.
    • Serve warm or cold dip with chips, sweet peppers, breads, or tortilla.
