Ingredients to make artichoke baby greens dip
You will need the following ingredients to make this dip.
Baby greens - This recipe uses baby chard, kale, and spinach mix. These are a rich source of vitamins A, C, and K, and are also rich in iron. If you can't find baby greens, use regular spinach instead and that would be exactly delicious too!
Artichokes - This recipe uses jarred artichokes in oil. You can also use canned artichokes instead. If using fresh artichokes, process them and then use in the recipe.
Cream cheese - This gives the creamy and delicious base for the dip. Adds protein and calcium too.
Mozzarella cheese - this gives the cheesy pull effect when baked and adds flavor as well as proteins.
Parmesan - I use either my vegan parmesan or vegetarian parmesan. Feel free to use regular parmesan if you wish. Sprinkle a little extra on top too. Since parmesan will be a bit salty, add salt accordingly.
Garlic - enhances flavor
Salt - gives flavor
Chili flakes and black pepper - Adds spicy heat to the dip.

This can be easily whipped up even at the last minute to entertain guests. But if you plan for a huge crowd, you have this dip, so relax and enjoy your day. You can assemble this dip and refrigerate one to two days ahead. Just bake until bubbly just before serving the appetizer.
Storage
You can store leftovers, if any, in an airtight container in the fridge for 3-4 days. Warm the dip in the oven or airfryer and serve.
The leftovers can also be used for making quesadillas or grilled cheese too! My kids love the dip and the extended version of grilled cheese, so I always make more of this dip.

For the #2024alphabetchallenge, many whole wheat parathas were the featured ones. For this year, I have chosen a different theme for the alphabet challenge. I am sharing some easy, flavorful, creamy and cheesy dips in this year’s challenge. Stay tuned.
A warm dip is very comforting! This is the season for fresh spinach, kale, and chard and with artichokes, it makes a perfect dip for the theme as well as the season. This artichoke baby greens dip is the first in this series.
Artichoke Baby Greens Dip
Ingredients
- ½ cup Cream cheese room temperature
- 2 tbsp Sour cream
- 2 tbsp Vegannaise/mayo
- ½ tsp Chili flakes
- 2 tbsp Parmesan
- ¼ tsp Black pepper powder
- ⅛ tsp Salt
- ½ cup Artichoke hearts drained, chopped
- 2½ cups Baby greens (baby chard, kale, spinach) chopped
- 1 tsp Garlic finely chopped
- 1 tbsp Oil
- Crackers, bread, pita
Instructions
- Heat oil on medium flame. Add the garlic and saute for a minute. Add the chopped greens, cook for 2-3 minutes till the spnach is cooked crisp. Set aside to cool.
- Add cream cheese, sour cream, vegannaise, chopped artichoke hearts, salt, pepper, chili flakes, parmesan, and the sauteed greens mixture. Mix thoroughly. Add the shredded mozzarella cheese, combine well.
- Preheat the oven to 350 degrees F. Transfer the cheese greens mixture to a oven safe bowl (2 cup size). Bake for 20 minutes or until bubbly and cheese melting.
- Serve with sliced baguette, salt crackers, pita and/or tortilla chips.
