    This ricotta red pepper dip is a creamy, light, smoky, sweet and spicy dip perfect for scooping with veggies, chips, or bread.

    Why make this dip?

    This Ricotta Red Pepper Dip is a packed with flavors! The natural sweetness of roasted red peppers, coupled with the smoky flavors of the redpeppers and chipotle peppers with a touch of white balsamic, garlic, and basil is brightening and comforting in every bite. Not to mention the creaminess ricotta cheese and the addictive mozarella, this dip is your heaven.

    All you need is a couple of ingredients from your pantry and fridge and in minutes, you can make this dip and have a satisfying snack.

    I use this dip as a dip!. But they work incredibly well as a spread or a sauce. Play with dip to find numerous ways to make delicious meals.

    Have you thought about the nutrition load in this dip? It is packed with proteins from the ricotta. Additionally, it is a great source of calcium as well. The red peppers are a powerhouse of antioxidants. This dip gives you ultimate health benefits.

    Ingredients

    You will require the following ingredients to make this ricotta red pepper dip:

    Ricotta cheese - This creamy ricotta is the base of the dip. It adds tons of calcium and protein.

    Red peppers - sweet and smoky red roasted peppers add color and flavor to the dip.

    Chipotle peppers - along with the sauce adds a little kick while enhancing the smoky flavor of the dip

    Salt - gives flavor

    Garlic - adds flavor and aroma

    White balsamic vinegar - gives a flavor depth

    Basil - multiplies the flavor exponentially.

    Shredded mozzarella cheese - balances flavor, adds texture, proteins, and calcium

    Serving Suggestions

    I serve this bread, naan, or pita chips/bread as an appetizer. You can also use this budha bowls. My kids love to add an extra drizzle of this dip in their wraps. Use this dip as a sauce too.

    Storage

    This dip is so delicious that you and your family will be tempted to finish it as soon as it is made. You can store this dip in the refrigerator for 2-3 days and use it with chips or as a sauce with wraps.

    Ingredients

    • 1¼ cup Ricotta cheese
    • 1 cup Mozzarella cheese shredded
    • ½ tbsp White balsamic vinegar
    • 2 cloves Garlic
    • ¼ cup Fresh basil
    • 3 chipotle peppers with sauce
    • ¾ tsp salt
    • 3 red peppers roasted

    For Garnish

    • 2-3 Basil leaves finely sliced

    Instructions

    • Add everything except the mozzarella and process until smooth.
    • Transfer to bowl and mix the mozzarella cheese.
    • Transfer to a serving bowl, garnish with basil. Serve with pita, naan, or bread.

      Roasted red peppers have such great flavor! But I never would have thought to add the chipotle, this just sounds wonderful. One of these years I will remember to get basil in the ground after frost since we all love it, but every year I seem to only end up buying the hydroponic plants from the grocery store, which don't last.
