    Purple Sweet Potato Sago

    This sweet potato sago is a comforting, chilled, lightly sweet dessert  made with soft sweet potato chunks and chewy sago (tapioca pearls) along with tropical fruits.

    Why this sweet potato sago?

    Sago desserts are popular in many Asian countries. It is lightly sweet and rich in texture, and this sweet potato essentialy is a visual pleaser. A tasty treat too!

    Sweet potatoes add a natural, earthy sweetness that doesn’t require heavy sugar, making it feel wholesome. This recipe uses the purple variety of sweet potatoes. The purple sweet potatoes are rich in antioxidants yielding a great color appeal while adding nutrition and taste.

    This recipe uses fresh fruits like jackfruit which adds to the tropical touch along with tender coconuts. Adding grapes is yet another flavor twist. The grapes adds extra natural sweetness while complementing the color of the dessert.

    This recipe is milk based and for a vegan version you could replace it with coconut milk. This customization gives extra flexibility. Not only that but you can also adjust sweetness and texture.

    With tons of fresh fruits and tasty tuber, this sweet potato sago will easily be your new favorite dessert.

    Ingredients

     Sago - This recipe uses small taioca pearls. You may use either small or big tapioca pearls in this recipe. Cook it according to the package directions.

    Sweet potato - adds nutrition, fiber, and a pastel color to the dessert. This recipe uses purple sweet potato which gives the color. However, you may replace it with the variety that is locally available to you.

    Tender coconut slices with coconut water - Gives the perfect cool dessert that is rich in tropical flavors and textures.

    Evaporated milk, Condensed milk, Milk - A combination of these three milk gives the perfect sweetness and consistency to this recipe.

    Jackfruit - Sweet and fresh jackfruit add extra sweetness as well as flavor to this dessert. Makes it a perfect Asian flavored dessert.

    Black grapes - the grapes add color, nutrition, texture and flavor. You can replace the black grapes with the grapes available to you.

    Agar agar - gelling agent to make sweet potato flavored jellies for the dessert

    Ice cubes - for the chilling ice cold dessert to beat the heat. You can adjust the quantity based on your needs.

    Seving Suggestions

    This dessert is best served chilled. The addition of ice cubes makes it ideal for the cool effect. You could also use ice cubes under the serving bowl to keep it ice cold for a longer time.

    Storage

    If any leftovers, you can store this this sweet potato sago in the refrigerator for two to three days. When needed serve individual portions ice cold or chilled.

    You can also make thsi ahead and serve when needed if you are making this for a huge crowd.

    This sweet potato sago is a comforting, chilled, lightly sweet dessert  made with soft sweet potato chunks and chewy sago (tapioca pearls) along with tropical fruits.

    Ingredients

    • ¼ cup Sago
    • 1 cup Tender coconut slices with coconut water
    • ½ cup Evaporated milk
    • ½ cup Condensed milk
    • 1 cup Milk
    • 1-1½ cups jackfruit chopped
    • ¾ cup Black grapes halved
    • 1 cup Ice cubes
    • 1 cup Sweet potato cooked, cubed
    • ½ cup Water used for cooking Sweet potato

    Instructions

    • Add 3 to 4 cups water to a heavy bottomed sauce pot and bring it to a boil. Add the sago and cook for 12-14 minutes. Switch off the stove, close and allow it to cook in its own steam for another 10 minutes to turn glassy and transparent. Drain the water and set aside.

    • Boil the sweet potates for about 10-13 minutes until fork tender. Reserve the cookded water. Peel and chop the sweet potatoes
    • Bring the sweet potato cooked water to a boil and add agar agar powder, pour it into a bowl to set. Cut into cubes afetr it is set.
    • To assemble: Add the sago pearls, cooked sweet potato cubes, jelly, jackfruit, and tender coconut.
    • Mash some sweet potatoes in milk.
    • Add the condensed milk, evaporated milk, and sweet potato milk to the mixture. Add ice cubes. Mix thorughly.
    • Serve chilled.
