This is one of the sweet potato curry that I enjoyed as a child. The sweet and spicy flavors are awesome together. The mustard and the asafetida give added flavor making a delicious medley of flavors. This can be served as a great side. This pairs well with any meal plan. With cooked grains or flatbreads, this makes a meal complete with tons of flavors and nutrition. I make this curry often as a side, and these cutlets are also a great option for starters or snacks.
Holidays are the time when the oven is working on full swing mode. The oven is needed for everything on the menu from appetizer to dessert. A recipe that is easy to make when the oven is overworking would be a blessing. This stovetop sweet potatoes are easy and quick to make. Ingredients
Sweet potato - 350 g, 1/2-in quartered chunks
Salt - 3/4 tsp
Cayenne - 1/2 tsp
Turmeric - 1/8 tsp
Oil - 2-3 tbsp
Mustard seeds - 1/2 tsp
Split urad dal - 1/2 tsp
Asafetida - 1/8 tsp
Method
Heat oil in a pan. Add the mustard seeds and when it splutters add the split urad dal followed by asafetida. Fry for 30 seconds.
Add salt, turmeric, and cayenne, mix, cook covered for 2-3 minutes.
Cook uncovered for 2-3 minutes until it crisps a little.
Transfer to a bowl. Serve as a side.

Great side dish without taking up the room we need in the oven. These could probably be made in an instant pot as well, freeing up stove space.
