Purple Sweet Potato Sago

This sweet potato sago is a comforting, chilled, lightly sweet dessert  made with soft sweet potato chunks and chewy sago (tapioca pearls) along with tropical fruits.

Ingredients

  • ¼ cup Sago
  • 1 cup Tender coconut slices with coconut water
  • ½ cup Evaporated milk
  • ½ cup Condensed milk
  • 1 cup Milk
  • 1-1½ cups jackfruit chopped
  • ¾ cup Black grapes halved
  • 1 cup Ice cubes
  • 1 cup Sweet potato cooked, cubed
  • ½ cup Water used for cooking Sweet potato

Instructions

  • Add 3 to 4 cups water to a heavy bottomed sauce pot and bring it to a boil. Add the sago and cook for 12-14 minutes. Switch off the stove, close and allow it to cook in its own steam for another 10 minutes to turn glassy and transparent. Drain the water and set aside.

  • Boil the sweet potates for about 10-13 minutes until fork tender. Reserve the cookded water. Peel and chop the sweet potatoes
  • Bring the sweet potato cooked water to a boil and add agar agar powder, pour it into a bowl to set. Cut into cubes afetr it is set.
  • To assemble: Add the sago pearls, cooked sweet potato cubes, jelly, jackfruit, and tender coconut.
  • Mash some sweet potatoes in milk.
  • Add the condensed milk, evaporated milk, and sweet potato milk to the mixture. Add ice cubes. Mix thorughly.
  • Serve chilled.
