    What is enjoying summer without eating a few ears of corn? Mexican street corn is one of the delicious way to eat corn. The fresh corn if the season is grilled or roasted and dipped in a spicy, creamy sauce. Yes, creamy sauce, so get ready to get messy, unleash the child in you and enjoy the fresh summer street corn of Mexico.

    Elote, aka street style Mexican corn, is simple to make with pantry staples but has an extraordinary flavor profile. You get sweet, smoky, creamy, salty, spicy, and tangy notes all in one bite, making it a truly satisfying dish. 

    Fresh corn is available in all the markets, with husk or de-husked ones.  When corn is in season, add this to your summer barbeque or outdoor entertaining, or for a casual weeknight summer meal

    Elote is easy to pair with with grilled vegetables, tacos, burgers, rice dishes, and a variety of proteins. This easy summer side is a great addition to your menu.

    It is quite easy to make. Grill the corn. Make the sauce by mixing them and coat the corn in sauce. Sprinkle with more chili powder, cilantro, and serve with lime wedges.

    Without a doubt this elote is rich is comforting flavors. Beyond its delicious flavor, corn also provides necessary fiber, vitamins, and natural sweetness, making elote a wholesome way to enjoy summer produce.

    Ingredients

    To make the irresistible elote, you will require the following ingredients:

    Corn - Fresh ears of corn is the best! You can find these in your local farmer's markets or supermarkets. Dehusk and use it.

    Cheese - Mexican Cotija cheese, a crumbly salty cheese, is the perfect choice to use in this recipe. You can find vegetarian friendly brands in supermarkets. In case you do not find it, use a mixture of queso blanco and my vegan Parmesan as substitute, like in this recipe.

    Sour cream and Mayo - provides the creamy base for the sauce. This recipe uses Vegannaise, you can use your favorite Mayo.

    Salt - gives flavor

    Cayenne - gives the spicy punch.

    Lime - a little zest and juice enhances the flavors the street style way.

    Cilantro - enhances the aroma and flavors.

    Serving Suggestions

    Elote is perfect for summer parties and outdoor grilling parties. Serve this as a side, appetizer, or as a snack. This is an easy snack for any day.

    Storage

    You can make the sauce ahead or even in a jiffy. Store in the refrigerator until use. Store any leftover grilled corn or sauce in the refrigerator for a couple of days. When needed, warm the corn, smother with sauce and enjoy.

    Ingredients

    • 6 Fresh corn 
    • ½ cup Sour cream
    • ½ cup Mayonnaise
    • ⅓ cup Cilantro
    • ¾ tsp Cayenne
    • ¼ tsp Salt
    • ⅛ tsp Lime zest
    • 1 tbsp Lime juice
    • ¼ cup Queso blanco
    • 1 tbsp Vegan Parmesan

    For Garnishing

    • A little Cayenne
    • 1 tbsp Cilantro
    • 1 tbsp Crumbly cheese

    Instructions

    • Roast the corn on gas or grill.

    • Add the rest of the ingredients to a bowl and mix.

    • Take each grilled corn, dip and roll on the creamy sauce so that the sauce is coated on all sides.

      I have never made elote. It looks so creamy and packed with flavor. Maybe I'll try this year with some farm fresh corn.
