    This lentil sweet potato salad is a hearty, colorful combination of earthy lentils, roasted sweet potatoes, fresh vegetables, and a flavorful chipotle pomegranate vinaigrette. 

    Why you should make this lentil sweet potato salad

    The roasted sweet potatoes add natural sweetness and a soft, caramelized texture, while the lentils make the salad hearty and satisfying. The chipotle pomegranate vinaigrette brings everything together with a delicious balance of smoky heat, tangy pomegranate, and a touch of sweetness.

    Lentils add plant-based protein and make this salad filling enough for a light meal.

    Sweet roasted potatoes pair especially well with the smoky chipotle and tangy pomegranate vinaigrette.

    Tender lentils and roasted sweet potatoes are balanced with fresh, crisp ingredients for a satisfying bite. the added nuts provide texture.

    Once the sweet potatoes are roasted, the salad comes together quickly with minimal preparation. The ingredients hold up well, making this a convenient salad to prepare ahead of time.

    The chipotle pomegranate vinaigrette gives familiar ingredients a more interesting flavor profile with smoky, spicy, tangy, and slightly sweet notes.

    You can add your favorite vegetables, fresh herbs, nuts, seeds, or greens depending on what you have available. Add avocado, toasted nuts, seeds, or fresh herbs just before serving for extra texture and flavor.

    Ingredients

    To make this delicious lentil sweet potato salad, you will need the following ingredients:

    Lentils - Protein rich, budget friendly, adds lovely earthy flavor and nutty texture.

    Sweet potatoes - I prefer using the white flesh or Murasaki sweet pottaoes in this recipe. You can use what you have on hand. This pairs well with the lentils.

    Olive oil - to raost the sweet potatoes and for making the dressing.

    Salt - gives flavor.

    Red bell pepper - Gives a crunchy bite. Red pepper provides a brighter color and sweet flavor. You can use any variety that you have.

    Pomegranate arils - gives lovely color to the salad as well as adding a sweet bite.

    Onions - adds a punchy flavor. This recipe uses red onions and I prefer that in this salad.

    Pecan - gives a texture bite and enhances the protein content. Instead you can add your favorite nuts.

    Feta cheese - tangy crumbled feta cheese balances the flavor and adds proteins.

    Herbs - Mint, parsley, and dill work beautifully in this salad

    Tomatoes - cherry tomatoes add lovely sweet flavor to the salad.

    Garlic and ginger - add flavor to the vinaigrette

    Pomegranate vinegar - gives a flavor depth to the vinaigrette

    Chipotle peppers - these add a lovely heat and a hint of smoky flavor to the salad.

    Maple syrup - balances the flavors in the vnaigrette

    Cumin powder - gives a earthy and smoky flavor.

    Orange juice - Brightens up the flavors in the dressing with a citrusy aroma and taste.

    Serving Suggestions

    The flavors of the chipotle pomegranate vinaigrette work well at any temperature. Therefore, you can serve this at room temperature or chilled.

    This salad works great as a light lunch or dinner with some crusty bread, pita, or flatbread. Alternatively, you can serve it as a flavor packed side dish for any gatherings.

    If serving for a gathering, add the vinaigrette shortly before serving so the vegetables retain their texture.

    Storage

    I recommend storing leftover salad in an airtight container in the refrigerator for upto three or four days. The lentils and sweet potatoes hold up well, although the fresh vegetables may become slightly softer over time.

    If you are making the salad ahead, you can prepare the lentils, roasted sweet potatoes, veggies, and vinaigrette separately and refrigerate them. Toss everything together just before serving for the freshest texture. If using avocado, fresh herbs, nuts, or seeds, add them just before serving rather than storing them mixed into the salad.

      Ingredients

      • 1½ cups Murasaki sweet potatoes cubed
      • ½ cup Feta crumbled
      • ½ cup Lentils
      • ½ cup Tomatoes
      • 1 tbsp Olive oil
      • ½ cup red bell pepper chopped
      • ⅓ cup Pomegranate arils
      • ¼ cup Onion
      • ⅓ cup Pecans chopped

      Chipotley Pomegranate vinaigrette

      • ½ cup Mint cup
      • 2 tbsp Orange juice
      • ⅓ cup Parsley
      • 2 tbsp Olive oil
      • 2 tbsp Dill
      • 2 tbsp Pomegranate vinegar
      • 2 tbsp Maple syrup
      • ¾ tsp Cumin powder
      • 2-3 Chipotle peppers
      • ¾ tsp Salt
      • 1 Garlic
      • ½ tsp ginger chopped

      Instructions

      • Preheat the oven to 400℉. Drizzle the sweet potatoes with a tablespoon olive oil and a pinch of salt. Mix and spread as a single layer. Bake for about 202-4 minutes until it is tender.
      • In the meantime cook the lentils with enough water for about 20 minutes over medium heat. It should be tender but not mushy. Drain and set aside.
      • Add all the ingredients listed for the vinaigrette and blend. Set aside.
      • To a bowl, add the lentils, onions, tomatoes, bell pepper, pecans, feta, roasted sweet potatoes followed by the vinaigrette. Combine thoroughly.
      • garnish with some parsley, cheese, and pomegranate arils. Serve immediately.
