You can use a wide range of toppings that can include corn, peas, pickles, olives, salad (mayonnaise-based veggie mix), ketchup & mayonnaise, meat, red cabbage, beets, spicy sauces.
The flavors from the fresh cabbage pickle and the dill pickle are amazing! Each component adds to magical layers of flavor and everything blends so well with the baked potato. Potatoes - I recommend Russet potatoes that are ideal flor baking
Kisir - Turkish bulgur salad
Turkish Olivier Salad - this potato salad adds next level flavors. You may also use Russian salad or carrot salad instead.
Pickled cabbage - adds texture and flavor explosion to the baked potato
Green and black olives, Sliced dill pickle - Adds a zing flavor! Balances the meaty profile of potatoes with the acid flavors.
Corn - this reciope uses canned corn. This adds to sweet flavor explosion.
Salt - gives flavor
Butter - adds to the richness and flavor
Mozzarella cheese - shredded ones are good, You mau use thinly sliced ones like in this recipe. Whatever you have works!
Serving Suggestion
Kumpir is best and comfoting when you serve it immediately, right after assembling. The contrast between the hot, buttery potato and cold, crunchy toppings is the key in this unique flavor explosion experience.
Kumpir is not just a simple meal or snack. You can set up a kumpir bar for parties or gatherings with bowls of different toppings. This will be a unique and fun experience for everyone. You make make things ahead of time and set it up as a bar, making entertaining process easier.
To level up the meal, I serve with lemonade or lassi. Mango Ginger Lemonade, Limonana, Watermelon Cooler, Lychee Rose Lassi, Mango Lassi, or Nannari Sarbath are some that you can think of.
You may also serve with some lentil soups. Sometimes, I pair with Tadka Dal, Ecuadorian Lentil Stew, Mughlai Moong Dal for a hearty meal.
Storage
You may store the baked potato and the toppings separately in the refrigerator for 1-2 days. When needed warm the baked potato and top with the cold toppings to serve. This doesn't freeze well.

Kumpir
Ingredients
- 4 Medium Russet potatoes
- 3-4 tbsp Oil
- 1 tsp Salt
- ½ tsp Black pepper powder
- ¼ tsp Cayenne optional
- 6-8 tbsp Corn
- 4 tbsp Butter
- ½-¾ cup Mozzarella cheese
- ¾ cup Turkish olivier salad
- ⅔ cup Kisir
- 1-2 tbsp Parsley chopped
Purple cabbage pickle
- ½ cup Purple cabbage thinly sliced
- ½ tsp Lemon juice
- ¼ tsp Salt
Instructions
- Preheat the oven to 450 degrees F. Wash and dry the potatoes. Drizzle a little oil and sprinkle about 1/8th tsp of salt on each potato. Wrap them and bake for 45-50 minutes.
- While the potato bakes, in the meantime, mix the cabbage , lemon juice, and salt and set aside.
- Once the potatoes are done, slit them open, add salt, pepper, cayenne, and butter, and mash well to get a smooth consistency.
- Add the mozzarella cheese and mash again.
- Place the potato in a serving plate. Add 2-3 tablespoon of kisir followed by 2-3 tablespoons of Turkish Olivier Salad. Then top with corn,olives, dill pickles, followed by pickled cabbage.
- Garnish with a little parsley and serve immediately.
