About Dates and Walnut Paratha
I love serving healthy and nutritious food to my family. I know you would prefer the same and hence try this paratha. This dates walnut paratha, as the name suggests is made with dates and walnuts and sweetened only with dates. I have added date sugar and date syrup to enhance the sweetness such that every one from kids to adults would love to have this as breakfast. Keep in mind, this is neither too sweet not bland. Just perfect!
The walnuts add to the protein as well as omega fatty acids as well as giving a crunch factor here and there. Finally, this is made with whole wheat flour which gives wholesome nutrition. Now, tell me how you love these paratha once you try the recipe.
I have used dates in three forms in this paratha - dates, date sugar, and date syrup. It can be said that these parathas are loaded with dates and its nutritional benefits is what you'll be reaping by having these.
Ingredients
Whole wheat flour - This provides proteins as well as fiber. Any brand of whole wheat flour can be used.
Date syrup - This is made with dates only and so artificial sweeteners or sugar is added. This is available in Indian as well as Middle-Eastern stores.
Date sugar - Date sugar is powdered dry dates. This adds sweetness naturally to this paratha.
Dates - Adds flavor, nutrition, and sweetens the paratha.
Salt - A little salt brings out the flavor to the max.
Walnuts - Walnuts are rich in omega fatty acids and boost the nutritional profile. It also adds to the crunch and nutty flavor.
Water - to knead the dough.
Oil - Ghee is used in this recipe. You can use melted butter to brush the parathas. For a vegan version, you can use any neutral flavored oil.
Storage
I prefer making flatbreads and parathas as they are easy to make and easy to store too. These parathas are great for a couple of days when stored at room temperature. However, storing in fridge extends the shelf-life. I store this for up to a week. I warm these on a pan and serve with a little date syrup.
Serving Suggestions
This paratha can be served as such. It is not overly sweet but the perfect sweetness makes it enjoyable as such. If you are a dates lover or if you like to dunk your food in dips/sauces, or if you want to enrich the food, I would emphasize on serving the parathas with a little date syrup. Date syrup are sugar free and healthy. A schemer of cream cheese and a drizzle of date syrup on this paratha will be my heavenly breakfast. Kids would love that idea.

Note about rolling these parathas
Here is tip that I would like to share with you. This paratha is high in sugar content and it might be sticky and tight when you actually roll the parathas. Just before rolling, chafe and shape the dough into a ball. This will loosen up the dough resulting in an easy rolling of the parathas.

Dates Walnut Paratha
Ingredients
- 11/2 cups Whole wheat four
- 4 tbsp Date syrup
- 20 Dates
- 4 tbsp Date sugar
- 1/2 cup Walnut
- 1/2 cup Water
- 1/8 tsp Salt
- 3-4 tbsp Oil/ghee/butter
- Date syrup for serving
Instructions
- Process the dates and walnuts in the food processor for about 2 minutes until you get a coarse texture.
- Add the whole wheat flour, processed dates-walnut mixture, date sugar, date syrup, oil to a bowl. Sprinkle water and knead to a smooth dough. Set aside for 15 minutes.
- Divide the dough into 8 equal portions.
- Roll into a 8 or 9-in circle. Brush with oil/ghee. Fold the edges towards the center to form a square shape. Flatten it into 8-in square.
- Alternatively, you can roll into a 8 or 9-in circle and cook the paratha.
- Heat a cast iron pan over medium flame. Place the paratha on the pan and cook for about a minute. Flip and cook for another minute. Brush the top with oil/ghee/butter, flip and continue to cook for another 30 seconds. Brush the top with oil/ghee or butter, flip and cook for 10-20 seconds. Remove from the pan and set aside. Repeat with the rest of the paratha.
- Serve warm with date syrup.
