    This tangerine upside down cake is the cake for this Spring season that screams with flavors of fresh tangerines with a lovely hint of vanilla and cardamom. This eggless cake is a pure delight for cake lovers of all ages with a tasty and aromatic crumb in every bite with a perfect balance of flavors.

    Tangerines

    Tangerine adds to the flavor base in this recipe. Tangerines are bright orange in color with a stronger flavor profile than oranges. Though they are less sour than oranges, they are a bit tart than mandarins. Tangerines have a slightly tougher skin but present a great bold flavor inside and out. This fruit thus makes a perfect flavor vehicle for any cake.

    Ingredients

    All purpose flour - This forms the base of the cake.

    Tangerine - I have used tangerine juice and zest for this recipe. This adds beautiful flavor and aroma boost to the cake.

    Cardamom powder - Selefina Spices cardamom powder is smooth and bold in aroma and flavor. This enhances the flavor profile of this cake.

    Baking soda and baking powder - Leavening agents used in this recipe.

    Salt - Enhances flavor.

    Sugar - Sweetens the cake.

    Vanilla extract paste - Taylor and Colledge Vanilla extract paste provides the best vanilla flavor and is easy to use too.

    Thick yogurt - Adds flavor as well as provides a beautiful crumb.

    Corn starch - gives structure to the cake.

    Oil - neutral flavored oil works well in this cake.

    Thick Yogurt

    I make thick yogurt by setting the everyday homemade yogurt on a strainer for 30 minutes. Yogurt will give a beautiful leavening effect when it reacts with the baking soda in the cake mixture. You can use the thicker yogurt for the cake and in addition, use the whey in other recipes like when you knead chapati dough. Greek yogurt is even thicker and you can use that in this recipe too.

    Storage

    This is a small cake. It is perfect for sharing with family. However, if there is any leftover cake, I pack it in an airtight container and refrigerate it. It stays best in the fridge for four or five days.

    Is this cake vegan?

    This recipe is not vegan. Though this recipe uses oil, the recipe also uses thick yogurt. Yogurt helps in leavening the cake when it reacts with baking soda while baking yielding a beautiful crumb and soft texture. However, If you prefer a vegan version, you can try with a vegan yogurt. 

    Variation

    Like I said before, I added tangerines to this cake. In case you do not have tangerines, you could use oranges instead. Make sure to pick nice and ripe oranges for your recipe.

    Tangerine Upside Down Cake

    This is a delicious, eggless tangerine upside down cake that is loaded with flavors and aroma and is easy to make.

    Ingredients

    • 1 cup All purpose flour
    • 1 tbsp Corn starch
    • ½ cup Sugar
    • ½ cup Tangerine juice
    • 3 tbsp Thick yogurt
    • ¼ cup Oil
    • ⅛ tsp Salt
    • ½ tsp Baking soda
    • ½ tsp Baking powder
    • ½ tsp Tangerine zest
    • ¾ tsp T&C vanilla extract paste
    • ⅓ tsp Selefina Spices Cardamom powder

    For the Tangerine Layer

    • 1 Tangerine cut into thin slices
    • 1½ tbsp Sugar
    • ⅛ tsp Selefina Spices Cardamom powder

    Instructions

    • Preheat the oven to 350℉
    • To a bowl, add the flour, corn starch, salt, baking powder, baking soda, and cardamom powder. Combine thoroughly.
      Mixing flour, corn starch, baking powder, baking soda, salt, and cardamom powder together in a bowl.
    • Mix the cardamom powder and sugar and set aside.

    • To a bowl, add the sugar, tangerine juice, and thick yogurt. Combine well until the sugar dissolves completely. Then, add the oil, vanilla extract paste, and mix thoroughly.

    • Add the dry ingredients in three or four steps to the wet ingredients, beating thoroughly. Fold in the tangerine zest.

    • Grease a 6-inch baking pan. Sprinkle the cardamom sugar on the bottom and line the bottom of the tray with thin slices of tangerines

    • Pour the cake batter on top. Tap a couple of times and place it into the oven to bake for 28-29 minutes (check with a toothpick if the cake is done).

    • Remove from the oven and cool completely.

    • Carefully, transfer the cake to a platter. Serve slices of delicious tangerine upside down cake.
