These grain-free veggie noodle cutlets are a delicious, and healthy snack made with spiralized veggies and garbanzo noodles. These are gluten-free too and are easy to make and you can serve them for a tasty afternoon snack with a cup of coffee or chai. These are vegan too!
Why these Grain-free Veggie Noodle Cutlets?
In simple words, they are fun and delicious! And healthy too! With tons of veggies in a spiralized or noodle form, these cutlets are a great way to sneak healthy veggies for your family. There are no potatoes in this recipe. Instead, I used sweet potatoes which offer better nutrition. In fact, I used the golden and white variety. Any variety can be used in this recipe.
Moreover, there is no all-purpose flour or bread is used int his recipe. Garbanzo noodles are used to hold the spiralized veggies together with a little garbanzo flour. This adds to the protein content of the cutlets. Roasted spaghetti squash with a noodle texture is a perfect addition to the recipe. With tons of noodle texture, this noodle cutlet will become your family favorite for sure.

Ingredients
To make these gluten-free and grain-free veggie noodle cutlets, you will require the following ingredients:
Garbanzo noodles - I have used leftover cooked garbanzo noodles in this recipe. This makes the noodle cutlet recipe grain free and gluten free. This also adds to the protein profile.
Spiralized veggies - Zucchini, carrots, beet, sweet potatoes, kohlrabi are used in this recipe.
Veggies - In addition onions, Bell peppers, roasted spaghetti squash, ginger, and garlic used enhance the flavor and nutrition profile.
Spices - Cumin, fennel, cayenne, turmeric, and garam masala enhance the flavor profile.
Salt -gives flavor
Oil - Neutral oil is used in this recipe to lightly sauté the veggies.
Herbs - Cilantro and curry leaf used in this recipe.
Peanuts - Roasted peanuts add to the nutty flavor as well as the proteins.
Sesame seed - The sesame seed coating gives a tasty crunch to the cutlet while enhancing the protein profile.
Thai chili - to boost the heat. Add as per your spice tolerance.
Garbanzo flour - This is added to bind the cutlets.
A Note
The cutlets are cooked on the pan. To prevent the veggies from being overcooked, lightly sauté them initially. This keeps the texture and flavor. Beets and kohlrabi take longer to cook than sweet potatoes, zucchini or carrots. So sauté them with onions and bell peppers. Then add the quick cooking ones. Roasted spaghetti squash should be added finally to the mixture before shaping as it is already cooked.
Serving Suggestions
These cutlets and fun and healthy snack that would be loved by all age groups. This healthier version is a great way to sneak tons of veggies for picky eaters. You can serve this with some ketchup, spicy ketchup, or with mint-cilantro chutney. A cup of masala chai is a perfect accompaniment to this snack!

Grain-Free Veggie Noodle Cutlet
Ingredients
- 1 3/4 cup Garbanzo noodles cooked
- 1 tsp Salt
- 3/4 cup Spiralized carrots
- 1 cup Spiralized kohlrabi
- 1 cup Spiralized beet
- 1 cup Onion sliced thin
- 11/2 cup Spiralized sweet potato white or golden or purple
- 1/2 cup Spiralized zucchini
- 1/2 cup Spaghetti squash roasted
- 2-4 Green chili finely chopped
- 11/2 tbsp Ginger finely chopped
- 11/2 tbsp Garlic finely chopped
- 1/2 cup Peanut roasted
- 3 tbsp Garbanzo flour
- 1/2 tsp Turmeric
- 1 tsp Chili powder
- 1/2 tsp Garam masala
- 1/2 tsp Cumin
- 1/2 tsp Fennel
- 4 tbsp Cilantro chopped
- 4 tbsp Mint chopped
- 1 Curry leaf chopped fine
- 1-2 Thai chili finely chopped
Instructions
- Mash the noodles and set aside.
- Grind the roasted peanuts to a coarse powder.
- Heat oil in a pan, add the cumin, fennel, and asafetida, fry for 30 seconds. Then add the ginger, garlic, Thai chili, and curry leaves, fry for 30 seconds.
- Add the onion, bell peppers, spiraled kohlrabi, and beets. Saute for 3 minutes.
- Then add the spiralized carrots, zucchini, and sweet potatoes. Saute for 2 minutes. Next, add the salt, turmeric, cayenne, and garam masala, mix well, and saute for 2 minutes. Switch off the flame.
- Add the cilantro and ground peanuts. Then add the garbanzo flour and spaghetti squash. Combine well.
- Divide it into 11 portions. Coat with sesame seeds.
- Heat a cast iron pan. Drizzle oil and place the cutlets. Pan fry for 3-4 minutes over medium heat. Then flip and cook the other side for 2-3 minutes.
- Serve with ketchup or mint chutney.
