    Onion Oaxaca Dip

    This onion Oaxaca dip is high in protein, rich and creamy, and packed with umami from caramelized onions is perfect for scooping with chips or fresh peppers.

    Why this dip?

    In simple terms, I would describe this dip as your favorite French onion dip and queso fundido brought together in one delicious version!

    The caramelized onions bring out natural sweetness and umami, adding rich, savory depth without overpowering the dish. While the Oaxaca cheese melts like a dream — creamy, stringy, and mild making this dip ultra satisfying. The cheese pulls are inviting and addictive! Trust me, this will be gone in a flash.

    Greek yogurt adds to the protein replacing the sour cream in regular French onion dip. The tartness of the yogurt also balances the rich cheese in the dip. If you are looking for including more protein, this is a great idea.

    This melty, savory dip with the hint of Serrano pepper is a perfect crowd pleaser. It’s the kind of dip that feels both comforting and elevated. Serve it at parties, taco nights, or as a warm appetizer for any gathering, or as a cozy family snack.

    The serrano pepper adds just a touch heat but it doesn't crank up the heat. The spicy heat can be customized as per your preference. You can also swap with jalapenos, chipotle peppers, or just black pepper and cayenne. You can make it mellow for a kid-friendly version or a fiery adult version. Totally customizable in all possible ways.

    Ingredients

    Onions - The star of the dip. Adds a umami sweet flavor once you caramelize them. This recipe uses red onions as it packs some punch. You may also use white onions or yellow onions too.

    Butter - boosts the flavor.

    Serrano pepper - adds a boost of heat in every scoop of this dip. Yopu may adjust or swap with chipotle or jalapeno to custimize the heat level.

    Cayenne and black pepper - adjust as per your flavor for the spicy heat.

    Salt - a little gives the flavor while caramelizing the onions. The cheese also adds to the saltiness so check the taste and adjust the flavor.

    Cilantro and green onions - this rich and creamy dip needs a balance with fresh herbs. Green onion in turn also adds to the onion aroma and flavor.

    Cheese - this recipe uses a mixture of cheese - Oaxaca cheese, Cheddar cheese, Cream cheese, Cotija cheese. Cream cheese adds a creamy base for the dip and cheddar gives the sharp flavor while Oaxaca cheese adds to the rich flavors and ooey gooey cheese pull effect. In case you do not have Oaxaca cheese, use mozarella instead. Cotija cheese on top adds another layer of cheesy flavor with a tang. Keep in mind that all Oaxaca or cotija cheese are not vegetarian friendly and make sure to check that when you shop for cheese. Wholefoods brand is vegetarian friendly.

    Greek yogurt - adds to the protein and balances the flavor with its tartness. You may substitute with sourcream f you do not prefer a higher level of protein.

    Serving Suggestions

    My personal favorite way to enjoy this warm dip is with sweet peppers or blue corn chips. However, this is best to serve with bell peppers, jicama, sliced baguette, crostini, warm pita or naan. Or warm tortillas!

    You can also elevate the experience by serving this dip in a mini cast-iron skillet for that queso fundido vibe or in ramekins. Or jazz up your style by keeping it warm in a small slow cooker or fondue pot!

    Storage

    This dip is best when you serve it warm. If you have leftovers, store them for a couple of days in the refrigerator and warm in the oven before serving with chips or veggies.

    You may use the leftovers in quesadillas or on tacos too! Or on your toast for a tasty breakfast.

    Ingredients

    • ½ cup Cream Cheese at room temperature
    • ½ cup Greek Yogurt
    • 2 cups Onions thinly sliced
    • 2 tbsp Butter
    • ½ tbsp Garlic finely chopped
    • ⅛ tsp Black pepper
    • ¼ tsp Salt
    • 3-4 tbsp Cilantro finely chopped
    • ⅓ cup Green onions thinly sliced
    • ¼ tsp cayenne
    • 1 cup Oaxaca cheese shredded
    • ½ cup Mild Cheddar cheese shredded
    • ½ tbsp Serrano pepper finely chopped
    • 1 tsp Cotija cheese

    Instructions

    • Heat a pan. Add the butter and saute the sliced onions and garlic with salt and pepper for 12-15 minutes over a medium flame until it is caramelized. Remove from the flame and cool.
    • To a bowl, add the cream cheese, Greek yogurt, cilantro, green onions, caramelized onion mixture, cayenne, serrano pepper, cheddar and oaxaca cheese. Mix thoroughly.
    • Preheat the oven to 350℉.
    • Transfer the onion-cheese mixture to two 4-in baking bowls or to smaller ramekins. Sprinkle with Cotija cheese. Bake for 15-17 minutes until the cheese misxture bubble and melted. Remove from the oven.
    • Serve warm with chips, peppers, tortilla, naan, or pita.
