This Cherry Falooda is a fun take on the summer classic Falooda, but making use of the abundance of cherries we have in the summer. It’s a fun interactive dessert that you should probably share…but you won’t want to!! So get your spoons and straws ready to dig into this delectable dessert!

This is an ice cream based monster dessert with jello, fruits, nuts, corn vermicelli, creamy flavored milk, and of course ice cream. This recipe uses gelatin free jelly using agar agar. It is easy to make jelly with agar agar, and this jello can also be used in cakes, Blood Orange Poke Cake. This falooda recipe has the step by step procedure for making cherry jelly with agar agar.
This recipe uses cherry jam and candied cherries. Every season, after we are back from cherry picking, I make a batch of cherry jam, and also a cherry pie. Sometimes I make some cherry pie filling and freeze for later use. Fresh chopped sweet cherries can be added to the falooda. If you do not have fresh cherries, candied cherries or dried cherries can also be used. The option of using cherry jam and candied or dried version is a great plus as this falooda can also be made even when cherries are not in season.

To make this falooda the following ingredients are required.
Cherry swirl ice cream - This ice cream boosts the cherry flavors. Cherry ice cream, or even vanilla ice cream can be used.
Basil seeds - These seeds have a cooling effect and the tiny seeds swell in water. Chia seeds can also be replaced if you do not have these.
Jelly - Cherry flavored jelly complements the falooda flavors. Agar agar based jelly is used in this recipe. This is made using sugar, water, cherry juice, and agar agar.
Candied cherry/fresh cherry - These are added in this layered dessert and as a garnish. Either one can be used based on what you have on hand.
Cherry jam - The jam ios used to make the cherry flavored milk. Cherry pie filling can also be used.
Evaporated milk and whole milk - these are required to make the thick sweetened milk layer in this monster dessert.
Falooda sev - These are corn vermicelli and are available in Indian grocery stores.
Sugar - to sweeten the jelly and the milk.
Sugar syrup - A sweet layer at the bottom of the dessert. Cherry flavored syrup can also be used.
Almonds - Almonds and cherries are perfect pairs, and makes a perfect choice for this falooda. Basically, any nuts of your choice can be used as this adds to flavor and the crunch factor.

Servings
This makes two standard size falooda which are traditionally served in tall glasses. If making smaller portions, this recipe can make four servings.
A classic falooda is flavored with rose syrup, but there are so many other flavors and fruits you can experiment with due to the versatility of this dessert. Ingredients
2 servings
Sugar - 3 tbsp
Sugar syrup - 2 tbsp
Basil seeds - 1 tbsp, soak in ½ cup water
Falooda sev- ½ cup
Almonds - 3 tbsp, sliced
Candies cherry - ¼ cup, fresh cherry
Cherry vanilla ice cream - 4 scoops.
Water - about 2 cups
Cherry milk
Cherry jam - 4 tbsp
Evaporated milk - ½ cup
Milk - ½ cup
Cherry-Agar agar jelly
Cherry juice - ⅓ cup plus 1 tbsp
Water - ⅓ cup plus 1 tbsp
Agar agar - ½ tsp
Method
Soak the basil seeds in half cup of water.

Cook the falooda sev for 5-7 minutes in the remaining water. Drain and set aside.

To make the cherry agar agar jelly: Heat the water and sugar and when it begins to boil, add the agar agar powder. When to is completely dissolved, Remove from the flame, add the cherry juice.

Pour on to a flat container and set aside to set. In about 5-15 minutes, it will be set. Cut into cubes.

For cherry milk - Add the evaporated milk, milk, and cherry jam to a blender and blend to a smoothie.

For assembling:
Add a tablespoon of sugar syrup, followed by 2-3 tablespoons of cherry agar agar jelly, and one-fourth of the cooked corn vermicellito each tall serving glass.

Add one-fourth of the soaked basil seeds, followed by some chopped or candied cherries, almonds, and a generous scoop of cherry vanilla ice cream to each glass.

Pour the cherry milk equally into each glass.

Repeat the layers with remaining vermicelli, basil seeds, jello, and a scoop of ice cream. Garnish candied cherry, jello, and nuts. Serve immediately.
