These almond flour cookies are the most delicious, addictive, and easy to make cookies which is a sure hit across all age groups. These have a better nutritional and a greater flavor profile than any other cookies.
Why almond flour cookies?
These almond flour cookies aka badam katli or sand dollar are my favorite! They are unbelievably delicious!
Almonds are rich in proteins and are good for skin too. This recipe uses more almond flour than all purpose flour. It's a great alternative to regular cookies with all-purpose flour. It is like eating badam katli in the form of a cookie. Kids will be excited to eat a cookie and hence this is a great option to give to a picky eater.
Also, we have reduced our intake of sugar. These almond flour cookies are a reduced sweet version but you will not feel that at all. Just a bite of a cookie will make you take another one. As a kid, I loved to eat those storebought nut cookies. Making a better version of it, is the most ideal substitute. We love this cookie and I bake this cookie year after year. It is addictive! and loved!
Ingredients
To make these almond flour cookies, you will require the following ingredients:
Almond flour - Gives flavor, texture, and forms the flavorful base for the cookie
All purpose flour - holds the cookies together giving structure
Salt - enhances flavor
Baking Powder - leavening agent
Sugar - sweetens the cookies
Butter - gives flavor to the cookie
Granulated sugar - for rolling the cookies before they bake in the oven. Gives that sweet hit in the first bite and adds texture.
Sliced almonds - sliced almonds add to flavor, texture, and gives the sand dollar effect.
Storage
These cookies are best at room temperature for 5-6 days in an airtight container. However, you can store it in the refrigerator in an airtight container for extending its shelf life.
You can serve these as snacks. It is a perfect chai time and is great with a cup of masala or ginger cardamom chai.
These cookies are also great to give as edible gifts for Diwali, Christmas. Celebrate this holiday with these almond flour cookies! If you are hosting a beach themed party, these almond flour cookies should be a must treat on the list!
Variations
Though this cookie can be made without rolling in sugar and adding almond slices, I highly recommend it. But it would taste perfect and amazing without these too. You can add chopped or slivered almonds too.

Almond Flour Cookies
Ingredients
- 1½ cups Almond flour
- ½ cup All-purpose flour
- 1 tsp Vanilla
- ⅔ cup Brown sugar
- 6 tbsp Butter
- 1 tbsp Flaxseed powder
- 2 tbsp Milk
- 3-4 tbsp Granulated sugar
- 2-3 tbsp Almond slices
- ½ tsp Baking powder
Instructions
- In a bowl, add the flax seed powder and milk Keep aside.
- Preheat the oven to 350℉.
- In another bowl add the almond four, salt, baking powder, all purpose flour, mix well.
- In another bowl, cream the butter and brown sugar. Add the flaxseed mix and vanilla, and beat till fluffy.
- Add the dry ingredients in instalments and mix thoroughly.
- With a cookie scoop, make 24 equal sized portions. Roll it on sugar crystals. Keep them on a silicone lined baking tray. Flatten them. Press a couple of almond slices gently onto the cookie.
- Bake for 10min. If you want a softer cookie, make sure to take it out by 8 min. Remove from the oven and cool completely. Repeat with the next batch.
- Store in airtight container.
