Caramel falooda is an addictive dessert that everyone would love to have! This may sound like a caramel overload and lot of calories but each and every calorie is worth it! This is so tasty that it is hard to share but a great one to share too! And donβt skimp on the caramel cashews! It gives an amazing crunch and flavor!
Now, If you are wondering whether you need spoon or straw to enjoy this, well, you'll need both. Every bite and evry sip is a trip to heaven!
Falooda....if you are wondering what is it, then..It is an Indian version of cold dessert made with very fine vermicelli, nuts, sweet basil seeds, syrup, thick milk and icecream. Fruits are also added. It has its origin in Persia. Traditionally, rose syrup is used to flavor the falooda, but now different variations are popular and equally delicious too!
Now let's look into the ingredients that went into this falooda:
Buttercotch chips
Caramel bits and toffee bits
Tutti-fruity - these are sweetened papaya bits.
Falooda Sev - this is a fine vermicelli made with corn. This is available in many stores. This can be made at home too. If you can't find feel free to use fine vermicelli.
Caramel Sauce - homemade or storbought, this is the star of the recipe, well along with cashews. This sauce replaces the traditional rose syrup in falooda in this recipe.
Caramel Cashew - the co-star of this falooda! Do not skimp on this. Add this generously!
Cashew Caramel Milk - milk or thick milk is used in falooda. To make this falooda extra divine, I made caramel flavored cashew milk! It's easy to make. This can served as a drink too!
Apples - fruits are added to falooda for extra flavor and flair. Apples are best partners with caramel. So decided to include that in the recipe. I have used Fiji apple, but any apple of choice could be used.
Sweet Basil Seeds - also called as tukmaria or sabja seeds. These have a coolant property. They just swell up in water and look like amazing bubbles. These are available in grocery stores, If you can't fine, chia seeds are a great alternative.
Ice Cream (not pictured above) - caramel swirl, salted caramel icecream can be used for the recipe. Dulche de Leche also pairs perfectly. Even vanilla icecream with extra drizzle if caramel would work perfectly!
Falooda is a layered dessert and these are also great to serve to guests too! This serving size is a big one and falooda's are kinda monster drinks:-). It's easy for a falooda lover to have this serving. But works great to share for two persons. Mind it, this is SO delicious that it is very very hard to share! These can be layered in small glasses too to serve as portioned individual dessert.

Can't believe that is almost end of 2021 and here we are with our final challenge for this year in our #Improvcookingchallenge group. Every month we have two ingredients that must be used in our recipe and we share our recipes on the second Wednesday of each month. Nicole of CookaholicWife hosts this event and for this month we have caramel and cashew as the challenge ingredients. Drooling load of dishes can be made with these two ingredients. Often I make caramelized cashews or nuts for salad topping and this could be a great one to share. But wanted to go an extra mile! We love falooda in our home and wanted to share one of our loved versions of falooda for this event.

Ingredients
Makes 2
Caramel sauce - 5-6 tbsp
Tukmaria/sabja/basil seeds - 1 tsp
Water - 1/2 cup
Apple - 1/2 cup, finely chopped
Caramel bits - 1 to 2 tbsp
Toffee bits - 1 tbsp
Butter scotch chips - 4 tbsp
Carmel cashews - 1/3 cup
Tutti fruity - 3 tbsp
Caramel icecream - 4 scoops
For Falooda sev/noodles:
Falooda sev - 1/3 cup
Water - 1 cup
For Cashew Caramel Milk
Milk -2 cups
Cashews - 4 to 6
Caramel sauce - 3 tbsp
Method
Grind the cashews with milk. Transfer to a pot, add caramel sauce, bring to a boil. Cool this milk in refrigerator.
Soak the basil seeds in water for 10-15 minutes. They will absorb water and become a little glassy.
Boil falooda sev/corn vermicelli in water for 5 to 6 minutes. Drain and set aside.
To assemble:
Take 2 tall glasses. Add 1.5 tbsp of caraeml sauce to wach glass. Add1/4th of the falooda sev and soaked basil seeds to each glass followed by 1/3th of the apples. Add caramel bits, toffee bits, tutti fruity, caramel cashews, butterscotch chips. Add a scoop of icecream to each glass.
Add the remaining falooda sev, and basil seeds. Add a cup of cashew caramel milk to each glass followed by a tablespoon of caramel sauce
Add another scoop of icecream.
Add the remaining apples, caramel and toffee bits, butter scotch bits, tutti fruity, and caraeml cashew. Drizzle a little caramel on top. Serve.
