This is an easy, quick, and spicy pickle made with the rind of watermelon. This vegan watermelon rind pickle is great to jazz up your taco, or to eat as such, or with yogurt rice, or just with yogurt.
Sometimes we crave our simple meals that are so special to us growing up, but then we’re faced with the inevitable problem of….the key ingredient being missing?! Well you’ll never have to lose out on your traditional raw mango pickle cravings again, because this super easy watermelon rind pickle is just the most refreshing, (did I mention easy?), sour and spicy pickle!
This watermelon pickle can be used as a refreshment or side in the traditional way, with yogurt, or rice, but you can also use it to top your tacos on taco nights, spice up your weekly pasta fix with a tangy element, or even find its place in your rushed morning grilled cheese. This pickle barely takes ten minutes to make, and will quickly become a household favorite. The best part is it’s essentially a no waste recipe, as you utilize the high fiber rind of the fruit!
The following ingredients are required to make this delicious pickle.
Watermelon rind - The rind of watermelon is used in this recipe.
Salt - Adds flavor
Chili powder/cayenne - Adds to spicy heat.
Lemon juice - Gives flavors and brightens up the flavor.
Oil - Any neutral flavored oil can be used.
Mustard seeds - Adds flavor.
Asafetida - Adds flavor.
The next time you cut watermelon for a healthy snack or to make this refreshing watermelon drink, use the rind for this delicious pickle. This can easily replace your instant raw mango pickle.
Ingredients
Watermelon rind - 1 cup, finely diced
Salt - 1/3 tsp
Cayenne/chili powder - 2/3 tsp
Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Asafetida - 1/8 tsp
Method
Add the chopped watermelon rind to a bowl and add the salt and chili powder.
Heat oil in a pan over medium flame. Add the mustard seeds and when it splutters add the asafetida and switch off the flame.
pour the tempering on to the watermelon rind and mix thoroughly.
Serve with yogurt, yogurt rice, or use a s topping in tacos.
