    Gluten Free, Vegan Cereal Chivda

    This is the most easiest chivda to make. This chivda or mixture is vegan, gluten-free snack, and a perfect companion with chai. Also, the chivda is a perfect edible gift for any occasion.
    Like I said, this is the most easiest to make. Yes! All you need is cereal and peanuts. These are pantry staples. One thing to check - the cereal should be unsweetened one. This is salty, savory, spicy snack and so the unsweetened cereal works perfect! Since chili powder can be adjusted as per taste, the spicyness can be made adjusted as per preference.

    It takes only 5 minutes to make this and about 10 minutes to cool. In under 30 minutes, this chivda which can satisfy all cravings is ready. Since this can be prepared at a short notice, this delicious snack is always one of choice for edible gifts during Diwali or Christmas!

    A little goes a long way! Since we are adding three different kinds of cereal, it is easy to make a good quantity of these. This recipe used unsweetened cornflakes, Rice Krispies, and Kix. Sometimes, I add Chex, if I have on hand. Also, there is shape and texture variation. Any othe shaped and unsweetend cereal can be added. This is also pleasing to the eye.
    Peanuts, a pantry staple is used. Fry them if using raw peanuts. If you have roasted ones, just add along with the cereal. Any other nuts of choice can be swapped or added in extra quantity. Nuts are very healthy and hence it will be a great addition. It is important ot fry the peanuts and then add roasted dalia or pottukadalai, so that the latter doesn't burn. 

    Just like this chivda, Roasted Garbanzos is another snack that is addictive and protein rich. Mala Peanuts/ Szechwan Spicy Peanuts is an amazing snack made with peanuts and the numbing Sichuan peppercorns.     Ingredients
    Cornflakes - 3 cups
    Rice crispies - 2 cups
    Kix - 2 cups
    Salt - 1/4 tsp
    Turmeric - 1/4 tsp
    Cayenne - 2/3 tsp
    Peanuts - 1 cup
    Roasted dalia - 1/2 cup
    Asafetida - 1/4 tsp
    Mustard seeds - 1 and 1/4 tsp
    Coconut oil - 2 tbsp
    Curry leaf - 1 sprig, torn
    Dried red chili - 2, torn
    Method
    Heat oil on a medium flame. When the coconut oil is hot, add the red chilies and mustard seeds. When it splutters, add the peanuts and fry for 1-2 minutes or until it begins to turn golden. Add the roasted dalia, and curry leaves, continue frying for a minute. Switch off the flame. Add the salt, asafetida, turmeric, and cayenne. Stir to ensure even cooking. 
    Add the cereals and mix well. Let it sit on the pan for 10-15 minutes and this will ensure crisp cereal.

    Store in an airtight container. Serve with chai.
