    This steamed pumpkin rice cake is a soft and spongy gluten free rice cake with pumpkin that adds a lovely color and flavor. You can serve this not only for breakfast but also for any meal, including special festive meal.

    These spongy and airy steamed cakes are light to your tummy and is perfect to serve for anyone. The cake develops a spongy texture due to the yeast and it also results in it being moist too.

    These pumpkin rice cakes are simple and wholesome! With the natural sweetness of the pumpkin along with the coconut milk, this is a comforting treat. You can serve this for a meal or for a light snack.

    These cakes are a perfect fall treat. The bright orange pumpkin adds flavor, color, and sweetness to the steamed delights. For sure these are a welcoming warm treat for anyone. You can make these cakes with simple pantry staples.

    These tasty rice cakes are a crowd pleaser. You can serve ths warm or at room temperature and therefor make this for your next fall gettogethers and wow your guests.

    Ingredients

    The following ingredients are required to make the soft pumpkin rice cake:

    Rice flour - gluten free rice flour is the base of these steamed cakes.

    Pumpkin puree - Homemade or canned pumpkin puree can be used. This adds to the rich and vibrant color as well as a generous dose of vitamins.

    Instant yeast - makes the cake airy and spongy. If using active dry yeast, activate the yeast and you might have to wait a little longer for doubling.

    Coconut milk - provides a creamy tropical flavor flair

    Baking powder - leavening agent

    Sugar - activates the yeast quickly.

    Salt - gives flavor

    Pumpkin seeds - adds texture and flavor.

    Water - to make the batter with the correct consistency

    What to serve with these?

    I serve this as a perfect breakfast, while they are ideal for a delcious snack time, or alongside a cup of tea. Since these are great at room temperature too, you can serve this during Holiday feasts.

    Though these can be had as such, I love to serve this with Kadala Curry, a stew made with garbanzo beans, spices, and coconut. You could also serve this with Cranberry Apple Salsa or chili.

    Storage

    These pumpkin rice cakes can be served warm or at room temperature. You can store this upto a day depending on your temperature zone. You may store these in the refrigerator for a couple of days. When needed, do a quick steaming and serve.

    Pumpkin Rice Cake

    This steamed pumpkin rice cake is a soft and spongy gluten free rice cake with pumpkin that adds a lovely color and flavor.

    Servings: 6 -12 cakes

    Ingredients

    • 1 cup Rice flour
    • ½ cup Coconut milk
    • ½ cup Water
    • ½ cup Pumpkin puree
    • 1 tsp Instant yeast
    • ½ tsp Baking powder
    • ¾ tsp salt
    • 1 tbsp sugar

    Instructions

    • Add all the ingredients to a bowl except baking powder and mix thoroughly.
    • Set aside for an hour to double.
    • Add the baking powder and mix.
    • Pour the batter into eight small moulds. Place in a steamer and Steam for 7-8 mins.
    • Serve warm or at room temperature with curry or chili.
