This is an easy, tasty, and vegan bite-sized finger food that is great for anytime snack, appetizer, a finger food for kids parties, or a high tea party.
This sandwich is one of my go to finger foods because this is so easy to make and can be made with pantry/fridge essentials. Not many ingredients are required to make these. It is also a great choice to fit in your budget while planning to entertain.
To make these tea sandwiches, the following ingredients are required:
Bread - I have used buttermilk and oatnut bread in this recipe. Basically any bread that you may have on hand will work.
Vegan Mayo - Vegannaise is used in this recipe. Any mayo of your choice could be used.
Cucumber and tomatoes - Very thin slices of cucumber and tomatoes are needed for this recipe. Ripe yet firm tomatoes are a great choice and any variety of cucumber or tomato can be used.
Salt and pepper - Salt and freshly ground pepper add flavor and a mild kick to these sandwiches.
As you can see, these tea sandwiches can be made with simple ingredients that are always available in your home.
Serving ideas
This is an anytime snack or meal in our home. This simple sandwich can be served for a fancy tea party. I would love it with regular masala chai too. This is a great one to serve for kids parties as it is easy to make and not spicy at all.
This sandwich can be made ahead a few hours back making entertaining a huge crowd a tangible task. Leftovers can also be stored in the fridge once it is tightly wrapped.
This recipe is also vegan as vegan mayonnaise is used. For flavor variations alter the mayo flavor for a fun flavor twist.
Ingredients
Bread slices - 6
Vegan mayo - 3 tbsp
Cucumber slices - 20, thinly sliced
Tomatio - 10-12 slices, thinly sliced
Salt
Black pepper
Method
Trim the edges of the bread. Apply half a tablespoon of mayo onto ome side of each bread. Then place slices of cucumbers followed by tomatoes. Sprinkle salt and pepper as per taste.
Fold with another slice of bread with the mayo side facing the tomatoes. Very gently press and cut into squares or triangles.
Arrange on a serving tray and serve.
