This is a quick and easy wrap that is delicious and comforting. It takes less time to fix this, made with paneer and naan, and is a great idea to pack for lunch. This can be weekend brunch or dinner too!
I received samples from Karoun Dairies towards developing recipes. The views expressed are my own. Karoun Dairies Labne is one of our favorites. It is great to use as a dip, make new dips, and also make shrikand. I made a quick green chutney labne. This is easy to make. Just mixt the two ingredients. I recommend doubling the recipe for this chutney labne if you are planning to pack a little of this as a dipping sauce too! This can be used with tortilla chips too! This chutney labne gives the perfect creamy spread for the wrap. If you do not have labne, greek yogurt or strained yogurt can be used.
I usually make wraps for lunch as they are easy to pack and easy to eat. Kids prefer wraps. I found Footlong Naans in the frozen section and used it in this recipe. It is slightly longer than the regular naans. Since the name was catchy, kids loved it. I chose garlic footlong naans. Any naan can be used. If using regular naan, four naans may be required. If mini naans are used, reduce the paneer, or make more wraps. I do not reduce the paneer as my kids would gobble them. Sometimes I use regular rotis to make this wrap. So any flatbread of your choice can be used.
To make this wrap, you'll need:
Naan - Any flavored naan can be used.
Chutney labne - delicious spread made with green mint-cilantro chutney and labne. Serve a little on the side as a sauce to dip and eat.
Veggies - cucumbers, lettuce, radishes, and tomatoes are great to use.
Pickled onions - we love the acid from the pickled onions. They add the brightness to this wrap. I highly recommend this. Fresh slices of onions can also be used instead.
Paneer - Garam masala marinated and sautéed paneer.
Green chutney - Add an extra drizzle of this chutney to jazz up, if you prefer a spicy one.
We love paneer. Who doesn't? This paneer used here doesn't demand a lot of work. Whenever I decide to pack this for lunch, I marinate it overnight in the refrigerator. I use garam masala, turmeric, cayenne, Kashimiri chili, and garlic powder. These are almost pantry staples. Kashmiri chili powder adds to color and is less spicy. Play around with your favorite spice powders for unique flavors for variations. The paneer also cooks in 5 minutes! Yes! That's a great advantage when you are trying to pack everyone's lunch and get out of the house. But, it is assured that this is a comforting and satisfying lunch.
Paneer is also one of our favorites. Paneer for lunch brings extra happiness. I make quick paneer curries or paneer burji to make grilled cheese or a sandwich for them. Ingredients
Serves 4
For the Paneer
Paneer - lb, rectangle cubes of 1x3-in
Karoun Dairies Labne - 2.5 tbsp
Salt - 1/8 tsp
Garam masala - 1 tsp
Turmeric - 1/4 tsp
Cayenne - 1/4 tsp
Kashmiri chili powder - 1/2 tsp
Garlic powder - 1/8 tsp
Dried fenugreek leaves - 1 tsp
Oil - 2 tbsp (to cook paneer)
For Chutney Labne
Karoun labne - 1/4 cup
Green mint-cilantro chutney - 2 tbsp
For assembling
Naan - 3 footlong naans or 4 regular naans
Chutney labne
Pickled onions
Sliced cucumbers
Sliced radishes
extra green chutney
Method
Add the labne, cayenne, turmeric, garlic powder, garam masala, Kashmiri red chili, dried fenugreek leaves to a bowl and mix. Add the paneer and gently toss to coat. Cover and set aside for 30 minutes or refrigerate overnight.
Add the green chutney to labne, mix, and set aside. If needed double the chutney yogurt to serve on the side too.
Heat oil in a pan. Add the paneer cubes, cook for two and a half to three minutes. Flip and cook for another 2 minutes. Remove from the pan and set aside.
Warm the naan on stovetop or in microwave, it has to be just warm and not hot.
For assembling the wrap: Spread the chutney labne on the naan as you wish.
Arrange the cucumber and radish slices. Add four paneer pieces per naan. Top with pickled onion. Drizzle extra green chutney if preferred.
Fold the sides to make a wrap. Serve immediately, or pack in a foil to take as a lunch!
