Ahhh! What to say….. temperatures are close to three digits these days and sometimes (maybe not some but most of the time:-)) cooking gets kind of pushed out. But you need to nourish yourself and enjoy your get-togethers! The answer is delicious and satisfying no cook meals!
Caprese is our top family favorites. I know it is yours too! Who doesn’t love caprese. Caprese steals your heart when the flavors melt in your mouth. Whether you make a standard caprese salad or on skewers, or in a cup form, it is bomb! Plus, this caprese uses the great summer produce! Fresh flavors of the season are always the best!
This is a low carb meal! It is always good to have a keto option in summer because you will want to indulge in frozen treats and drinks. This wrap is a great choice to keep your health in balance.
Wait! I know what you are thinking. To make a wrap, that too a keto one, you have a lot of options. Nowadays the market is loaded with tons of keto tortillas. Cheese, almond, or cauliflower tortillas are available and it is a great option when you want to make an easy meal and relax. My favorite one is the cheese one. Mozzarella wrap is the perfect one to make this wrap and my way to make this wrap, which my kids love! It screams caprese. There may be instances that you make it but never picture it. Well, it happened to me this time. So when I went to the market, unfortunately the mozzarella wraps were all gone. That would have made it perfect. No heating for even a few seconds required. That’s ok! There are other options that we often use. So in came the almond flour wrap. Great choice!
To make this recipe you need a few of your favorite ingredients
Low Carb Wrap - Almond flour tortillas are used here. Any keto or low carb tortillas would work.
Tomato - fresh Roma tomato slices, halved if the tortillas are small
Mozzarella - fresh slices of mozzarella works the best!
Basil - the fresh basil is the magic here
Balsamic reduction - this gives perfect flavor balance and depth. This is easy to make, just reduce the balsamic vinegar to half. That’s it!
When using almond flour tortillas, wrap a couple of them in a damp paper towel and microwave for 30 seconds. This makes it more pliable. Do not leave it for long, as it may crack when you roll.

Almond flour tortillas - 3
Tomato - 6 slices, halved
Fresh mozzarella - 6 slices, halved
Basil leaves - 12
Balsamic reduction - 1 tsp

Method
Wrap a damp paper towel on a couple of almond flour tortillas as microwave for 30 seconds.
Place the tortilla on a plate, arrange the tomatoes, mozzarella, and basil leaves alternating. Sprinkle a pinch of salt, pepper, and balsamic reduction. Fold both the sides to the center, securing with a toothpick.
Serve.
