The neighborhood bakeries sell in small rectangular portions or slices. To kick off 2021, this month's theme in #BundtBakers was "A Little Bit of Nostalgia: Bundts with Flavors from Your Childhood". There are a few flavors that I love, but this ranks first. I made this Bundt cake remembering those days! Perfect right, when you miss something, you can make and enjoy it! Camilla is hosting this event. This is an eggless cake. And I have used my own Mixed Fruit Jam. Store-bought mixed fruit jam or strawberry jam works great too.

Ingredients
All-purpose flour - 3 and 1/3 cups
Milk - 3 cups and 2 tbsp
Butter - 1 and 1/2 sticks (12 tbsp)
Sugar - 1 and 1/2 cups
Baking powder - 3 tsp
Baking soda - 1.5 tsp
Apple cider vinegar - 3 tbsp
Salt - 1/3 tsp
Vanilla - 2 tsp
Honey Syrup
Warm water - 3/4 cup plus 3 tbsp
Honey - 3/4 cup plus 3 tbsp
Topping
Jam - 3/4 to 1 cup
Honey - 2 tbsp
Coconut flakes - 2 - 4 tbsp
Method
Preheat the oven to 350 degrees F. Apply butter to the sides of a 10-in bundt pan and dust with flour. Cream the butter and sugar. Add in milk and vanilla and beat well. Slowly add the flour mixture and beat till all the flour is added. Add in the apple cider vinegar. Mix and pour it into the prepared bundt pan.
Prepare the honey syrup by adding honey to warm water. Mix and set aside.
Bake for 46-48 minutes. Test for doneness by looking for a clean skewer inserted into the cake. Cool the cake completely.
Reserve 1/3 cup honey cake. Use the rest for the cake. Poke the cake with a skewer and drizzle the honey syrup. Set aside for 10-15 minutes for the honey syrup to seep in.
Heat the jam, water, 1/3 cup honey syrup, and honey to melt the jam. Spoon this onto the bundt cake. Sprinkle coconut flakes.
Slice, serve, and enjoy!
