    This kale and kabocha paratha is a wholesome twist on the classic Indian flatbread with fall seasonal flavors perfect to serve with curries, yogurt, or pickles.

    About this paratha

    This is a flavor packed soft and flaky paratha! This paratha is not only rich in nutrients but also in taste and texture. The kabocha though adds a little sweetness, it adds a lovely color along with nutrition. It's sweetness is perfectly balanced by the Earthy and bitter kale. Ginger and green chili, in addition, add to the flavor balance.

    You can serve this for meal. It is great for breakfast whether you sit at the table or have it on the go. Or pack it for lunch. Serve for dinner too along with simple and comforting sides.

    This paratha is also vegan friendly. Instead of ghee, use oil in the recipe to make a vegan version.

    In a nutshell, this kale and kabocha squash paratha is a simple, yet tasty and wholesome meal that fuels your body with plant based energy.

    Ingredients to make kale and kabocha paratha

    Whole wheat flour - rich in fiber and protein, this makes the paratha a wholesome meal along with the nutrient dense addons.

    Salt - gives flavor

    Kale - Adds to the earthy flavor and to the vitamins

    Ginger - Adds a little warmth balancing the kabocha squash

    Sesame seeds - adds nutty flavor and texture.

    Turmeric - adds color and provides immune boosting benefits.

    Green chili - Gives a spicy flavor balancing the sweet kabocha squash. You may increase or decrease depending on your taste palette.

    Water - To knead the dough

    Kabocha Squash - subtly sweet and adds softness and color to the paratha. In addition adds tons of vitamins too.

    Ghee/oil - to cook the paratha

    Serving Suggestions

    The best part is that you can serve this paratha for any meal. Pack this for kids lunch or even as on the go breakfast given the assurance that it provides the nourishment. Serve with delicious curries for lunch, brunch, or dinner.

    Though this flaky kale and kabocha paratha is great to serve as such, it is great with raita, yougurt or curries. My kids prefer this with Mughlai Moong Dal or this Dal Makhni. However, I love with this simple and confroting Tadka Dal. You can serve this Garbanzo and Mint Raita or even Tomato Chutney. Else, for a quick and easy side serve with spicy pickle or achar.

    Storage

    These parathas are great to keep at room temperature for a few hours upto a day. However, I recommend storing it in the fridge if not using in a few hours as it extends shelf life upto 5-6 days. Reheat the paratha on the pan and serve with curries.

    Ingredients

    • 2½ cups Whole wheat flour
    • 1½ tsp Salt
    • 1½ cups Kale chopped and packed
    • 1½ cups Kabocha squash peeled, and chopped
    • 1-2 Green chilies
    • 1½ in Ginger chopped
    • ¼-⅓ cup Water
    • 1 tbsp Oil
    • 2 tbsp Sesameseeds roasted
    • ½ tsp Turmeric

    To cook

    • 4-5 tbsp Oil or ghee

    Instructions

    • Add the kale, kabicha squash chunks, ginger, green chili to the food processor and process until you get a coarse texture.
    • Make a soft dough with the whole wheat flour, kale mixture, one tablespoon oil, roasted sesame seeds, turmeric, salt by sprinkling water. Cover and rest for 15 minutes.
    • Divide the dough into 12 portions.
    • Roll into a 7-9 inch disc by dusting with flour as necessary. Spread a little ghee/oil. Keeping the edges intact, cut horizantal lines with a knife. Stack the dough keeping the edges together and make a coil shape. Dust with flour and roll into a 7-8inch disc.
    • Heat a pan on medium flame. Place a paratha on the pan and cook for 2 minutes, flip and cook for a minute. Brush both the sides with ghee/oil.
    • Serve with curries, pickles, or chutneys.
