    Kale and Sprouted Horsegram Paniyaram

    These kale and horsegram sprouts paniyarams with crispy edges and soft interior are a delicious, protein rich, and wholesome twist on the classic South Indian kuzhipaniyaram.

    About this paniyaram

    Paniyarams are also called pancake puffs, which are made all around the world with locally grown grains. You can call them as the Indian abelskeiver. Generally, paniyarams are made for breakfast, but it can be a snack or dinner too. The fluffy paniyarams are so versatile that you can make it plain simple or with added veggies or fruits or even filled ones. These light fluffy puffs can be packed with nutrition.

    Both kale and sprouts are very healthy and there is no need to elaborate the benefits as that's well known. Kale is rich in vitamins and minerals, while horsegram sprouts pack protein, fiber, and earthy flavor. The amino acids in horsegram are unique aiding to wholesome nutrition and it also helps in weight management. With the nutritional boost provided by these two ingredients, it is a great choice to include these soft and spongy paniyarams in your menu.

    These kale and sprouted horsegram paniyarams are crispy on the outside and soft inside. These paniyarams rich in nutrition and texture is a great delight for animal.

    These paniyarams are great for breakfast, lunch, or even for dinner. You can also make for your toddlers and school kids as a delicious after school snack.

    Ingredients

    What to serve this with?

    Any chutney like coconut, tomato, chilli, cilantro, or mint chutney pairs well with paniyarams for dipping or scooping. Check here for a collection of chutneys to choose, make, and serve with this paniyaram.

    This spicy Fresno Chili Pepper Chutney is one of my personal favorite combination. You can also serve this Tiffini Sambhar too.

    Storage

    The kale and sprouted horsegram paniyaram are comforting when served hot or warm. They taste great at room temperature also. You can store the leftover batter in the refrigerator for a couple of days. Make and serve it hot with chutneys.

    These kale and horsegram sprouts paniyarams with crispy edges and soft interior are a delicious, protein rich, and wholesome twist on the classic South Indian kuzhipaniyaram.

    Ingredients

    • 1½ cups Idli rice
    • 1 tsp Methi seeds 
    • 1 cup Sprouted horse gram
    • 1¼ tsp Salt
    • ¼ cup Onion  chopped
    • 1 cup Kale chopped, packed
    • ¼ tsp Ginger  chopped
    • ¼ tsp Garlic chopped
    • Oil

    For Tempering

    • ¼ tsp Split urad dhal
    • ¼ tsp Mustard seeds 
    • ¼ tsp Cumin
    • ⅛ tsp Asafetida
    • 1 tbsp Oil

    Instructions

    • Soak rice and methi seeds for 5 hrs. Drain the water, add the sprouted horse gram, and grind with fresh water to pancake batter consistency. Add salt and ferment overnight.
    • In a pan, heat oil and season with mustard seeds, split urad dhal, cumin, asafoetida. Add the chopped ginger and garlic and saute for a minute. Then add the chopped kale and saute for about 3 min.
    • Cool the kale mixture and add it to the batter. Add the onions too and mix well.
    • Heat the paniyaram pan. Add a drop of oil in each half-sphere and add about 1-2 tablespoon batter depending on how much the shape in the pan can hold.  Drizzle oil and cook for a couple of minutes. Flip it over and cook the other side.
    • Paniyarams are ready to be served hot with chutney of your choice.

      Anytime is fluffy and fermented paddu time for us, we simply love them. Just as well I have come across your paniyaram recipe using horse gram and kale. Something different from the usual urad rice batter. Can't wait to make them.

      I have horse gram, will make these paniyaram soon. A good twist to the usual breakfast menu. I think we can use horsegram without sprouting too.
