    This palak paneer cornbread is a delicious and fun twist with sweet buttery and earthy flavors. This tender and moist cornbread is a delightful addition to your holiday menu, or for a simple yet comforting meal option.

    Why this palak paneer cornbread?

    First of all, this moist and tender cornbread is delicious to the last crumb. This is bound to vansih quickly.

    I like to add my own twist to traditional recipes and this palak paneer cornbread is one among them. This combines the sweet cornbread with the flavors of a dlicious side palak paneer. The spinach and paneer add tons of flavors, nutrition, and is a delicous variation you can add to your holiday table. The sweet and buttery cornbread with the earthy flavor of spinach and creamy paneer is always a welcoming fusion of flavors with the right balance of spices. It is equally delicious as Vegan Pumpkin Coconut Cornbread.

    This is not just a holiday side but can also be a great meal option. Serve this with any salsa or dal for an easy and comforting meal.

    Ingredients

    To make this palak paneer cornbread, you will need the following:

    Cornmeal and all purpose flour - the base of the bread

    Spinach - adds flavor and nutrition

    Corn - Adds to the texture as well as sweet bite

    Paneer - soft cheese that adds to the protein as well as calcium, and flavor.

    Cottage cheese - enhances the protein content

    Milk - Adds to the flavor

    Flaxsed powder - binding agent

    Butter and oil - to cook the bread and keeps the bread moist and flavorful

    Ginger and garlic - flavor enhancers

    Spices - cumin, turmeric, Kashmiri chili powder gives flavor

    Salt - gives flavor

    Baking powder and baking soda - leavening agents used.

    Serving Suggestions

    You can serve this tasty cornbread for an easy and quick meal. However, it is the perfect one to serve as a meal too. I love to serve this wth either tadka dal or with salsa and cream. Personally, I love both the variations.

    Storage

    Since this has dairy products, it is advisable to store in the refrigerator doe about 4-5 days. Warm them in th microwave or in an airdfryer and serve,

    Ingredients

    • 1 cip Cornmeal
    • 1 cup All purpose flour
    • 1½ tsp Salt
    • ½ tsp Kashmiri Chili Powder
    • 1 tsp Cumin
    • 1 tsp Baking powder
    • ½ tsp Baking Soda
    • ¼ tsp Turmeric
    • 4 tbsp Butter melted
    • 1¾ tbsp Ginger finely chopped
    • 1¾ tbsp Garlic finely chopped
    • 1 tbsp tbsp Flaxseed powder
    • 1 cup plus 2 tbsp Milk
    • ½ cup Cottage cheese
    • 1/4 cup Oil
    • ½ cup Corn canned, drained
    • 4 cups Spinach chopped, medium packed
    • 1¼ cup Paneer grated

    Brushing

    • 1tbsp melted butter
    • 1 tsp maply syrup

    Instructions

    • Preheat the oven to 350℉. Mix the milk and flaxseed powder together and set aside to gel.
    • Add all the wet ingredients together.
    • Mix the dry ingredients together.
    • Mix the wet and dry ingredients together. Fold in the spinach.
    • Fold in the grated paneer and corn.
    • Pour the batter into a greased 8x8 baking pan.
    • Bake at 350℉ for 35-36 min.
    • Remove fromt the oven.Brush with butter and maple syrup. Let it cool completely.
    • Serve with dal, salsa, or with yogurt.
