Ingredients
To make this palak paneer cornbread, you will need the following:
Cornmeal and all purpose flour - the base of the bread
Spinach - adds flavor and nutrition
Corn - Adds to the texture as well as sweet bite
Paneer - soft cheese that adds to the protein as well as calcium, and flavor.
Cottage cheese - enhances the protein content
Milk - Adds to the flavor
Flaxsed powder - binding agent
Butter and oil - to cook the bread and keeps the bread moist and flavorful
Ginger and garlic - flavor enhancers
Spices - cumin, turmeric, Kashmiri chili powder gives flavor

Palak Paneer Cornbread
Ingredients
- 1 cip Cornmeal
- 1 cup All purpose flour
- 1½ tsp Salt
- ½ tsp Kashmiri Chili Powder
- 1 tsp Cumin
- 1 tsp Baking powder
- ½ tsp Baking Soda
- ¼ tsp Turmeric
- 4 tbsp Butter melted
- 1¾ tbsp Ginger finely chopped
- 1¾ tbsp Garlic finely chopped
- 1 tbsp tbsp Flaxseed powder
- 1 cup plus 2 tbsp Milk
- ½ cup Cottage cheese
- 1/4 cup Oil
- ½ cup Corn canned, drained
- 4 cups Spinach chopped, medium packed
- 1¼ cup Paneer grated
Brushing
- 1tbsp melted butter
- 1 tsp maply syrup
Instructions
- Preheat the oven to 350℉. Mix the milk and flaxseed powder together and set aside to gel.
- Add all the wet ingredients together.
- Mix the dry ingredients together.
- Mix the wet and dry ingredients together. Fold in the spinach.
- Fold in the grated paneer and corn.
- Pour the batter into a greased 8x8 baking pan.
- Bake at 350℉ for 35-36 min.
- Remove fromt the oven.Brush with butter and maple syrup. Let it cool completely.
- Serve with dal, salsa, or with yogurt.
