    Eggless Blood Orange Mini Bundts With Pink Glaze #SpringSweetsWeek

    These are easy and delicious blood orange bundt cakes that are moist and rich in flavors! With pink glaze made with blood orange juice, this will be a showstopper at the table. These are the best of the best! 

    These delicious cakes were made with blood orange, of course. If you are wondering what blood orange is,  then, these are similar to orange but have a flesh close to the color of blood, and hence the name. From the outside they look similar to regular oranges or may have some darker skin on the outside. But their flesh is brilliant red or blood red in color. It may be pink or maroon too depending on the fruit. The juice of these oranges are also red colored, naturally, and have a sweet-tart flavor. December to April is the peak season for this fruit and has the best flavors. This is great to use in juices, as such, baked goods, smoothies. 

    I received blood orange samples from Melissa's Produce and Dixie Crystals pure sugar that are used in this recipe. Love, Love, Love these blood oranges! I love a good deep red colored blood orange and Melissa's blood oranges were perfect in color and flavor. Paired with Dixie Crystals sugar, these mini bundt cakes were the best!

    Bundt cakes are special! Are you wondering what are they? Well, they are cakes made in a shaped pan, similar to doughnuts. The shape makes them special and they can be made in any flavors you love. Check the blog for many interesting bundt cakes that are eggless. And these cakes don't have to be frosted heavily. A drizzle, a glaze, or dusting with powdered sugar is enough. It drags you to it like a magnet! That being said, don't you think that these blood orange bundt cakes with pink glaze are the amazing one for a dessert? Yes, they are!

    Here are a couple of points to note. The brilliant blood red color of the juice gets lightened when you mix flour with it. It is expected. But, there is another change involved too. When you add more of the pure juice, while baking it may undergo a slight color change though it retains the flavor. I have added more juice and we love the flavor. If you do not want to see that, you could use just two tablespoons of the juice and substitute the remaining with milk. I have tried that way too. It is your personal choice to use minimum juice and zest and add a little more juice. The pink glaze is also made with pure juice and no food coloring is used. This also maximizes the flavors of the cake.

    Citrus fruits always add immense flavor and a zing to the food. I love this citrus cake and this Eggless Honey Meyer Lemon Bundt Cake. They both have different flavor profiles as the citrus is different, but very addictive! Citrus adds magic and brightens up the flavors!

    Ingredients
    Makes 10 mini bundts
    All-purpose flour - 1 and 1/4 cup
    Corn starch - 1 tbsp
    Salt - 1/8 tsp
    Baking powder - 1 tsp
    Baking soda - 1/4 tsp
    Butter - 4 tbsp
    Dixie Crystals Sugar - 3/4 cup
    Sour cream - 1/3 cup
    Blood orange juice - 1/4 cup
    Blood orange zest - 1 tbsp
    Aquafaba - 3 tbsp
    Vanilla - 1 tsp
    350 bake for 16 min
    A little butter and flour for dusting the bundt pan
    Glaze
    Powdered sugar - 1 cup
    Blood orange juice - 1 tbsp
    Method
    Preheat the oven to 350 degrees F.

    Add the flour, salt, baking powder, and baking soda to a bowl and mix. Set aside.

    Add the butter, sugar, sour cream, aquafaba, and vanilla to a bowl. Beat until light and fluffy. Add the blood orange juice and combine well.

    Add the flour mixture in two or three batches and beat to a smooth batter. Add the blood orange zest and fold in.

    Pour the batter into a buttered and prepared mini bundt pan. Fill only two-thirds.

    Bake for 16 minutes at 350 degrees or until the toothpick inserted comes out clean.

    Cool completely. Carefully remove the mini bundts from the pan.
    Mix powdered sugar with blood orange juice to make the pink glaze.

    Pour the pink glaze over the mini bundts and let it set. 

    Store in airtight container. Serve.
