    Devil's Black Forest Cake

    This Devil's Black Forest Cake is a delicious, moist, decadent, and chocolatey cake with cherry flavors! This black forest is vegan, and non-alcoholic, and perfect for the family members to enjoy with kids!
    This cake is made based on my favorite Chocolate Cake and has some modifications. This vegan cake is my inspiration to modify that into black forest cake. This cake is also easy to make. A little cherry slurry from the cherry mixture is added to the cake batter and the rest of the cherries are added in the bundt pan as a layer. The added cherry mixture makes the cake soft and moist! 
    If you are wondering what a Devil's food cake is, then it is made with dark cocoa such that the cake is very dark in color. This is opposite to Angel food cake which is light in color. This is the theme for this bake and read further to know more about it.

    When I was debating on the cake theme for today, I stumbled with lots of ideas. Luckily I had some dark unsweetened cocoa powder and these Maraschino cherries in my pantry. I was reluctant to go to a store to purchasing anything and wanted to create a delicious recipe using what I had. So I dropped the other ideas and thought of a black forest cake. 
    This recipe doesn't have any alcohol. The thick syrup upon boiling the cherries is used in the cake to add flavor. These cherries were boiled with corn starch to thicken. A couple of cherry liqueur can be added if preferred. The boiled mixture also helped in preserving the cake's texture.

    This cake can be decorated with a glaze, piping whipped cream and with chocolate curls, dusted with powdered sugar/cocoa, or serve as a naked cake like this. In addition, I served it with cherry sauce! Yes, I made a little sauce with another container of Maraschino cherries and the combination was YUM! I chose to serve with the cherry sauce to keep the Devil theme! And it worked out great!

    Cherries are soon going to be there everywhere and check out some interesting and delicious fresh chery ideas. Iced Cherry Green Tea Latte is a perfect drink to sip in hot weather and uses cherry compote. Vegan Chocolate Cherry Muffins uses some compote and some dried cherries! When cherries are in season I make some compote to have it with toast too!
    Fresh Cherry and Nectarine Crisp with Oat Strudel uses season's best fresh ripe cherries. Cherry and chocolate are divine combinations. They are amazing to be used together and these Cherry Almond Smoothie Bowl and Double Chocolate Cherry Almond Oatmeal Cookies are a must if you are a cherry lover.

    Ingredients
    For the Cherry Layer
    Maraschino cherries - 10-oz
    Corn starch - 1 tbsp
    Water - 2 tbsp
    For the Cake
    All-purpose flour - 1 cup
    Sugar - 2/3 cups
    Salt - 1/3 tsp
    Soda - 2/3 tsp
    Cocoa powder - 3 tbsp
    Oil - 1/4 cup
    Vinegar - 1.5 tsp
    Vanilla essence - 1 tsp
    Cold water - 2/3 cups
    Cherry mixture - from the above
    Cherry slurry - 2 tbsp (from cherry mixture)
    Method
    Add the cherries from the jar into a sauce pan and bring it to a boil. Make a slurry of cornstarch and water, add it to the cherries, stir and continue to cook for 2 minutes, the mixture would become thick, let it cool.

    Preheat the oven to350 degrees F.

    Add the dry ingredients and sift them. Add the wet ingredients and two tablespoons of the thick liquid from cherry mixture. Beat well to incorporate air.

    To a prepared bundt pan, add half the batter, add the cherry mixture and soread evenly. Top with the remaining batter. Tap gently.

    Bake for 35-36 minutes. Cool completely. Invert the pan and release the cake.

    The cake cane be served as such, or decorated with whipping cream or chocolate.
