    Caramel Coconut Apple Bundt Cake

    This is the most delicious, warm, comforting, eggless apple cake loaded with coconut, raisins, caramel, pecans and topped with luscious caramel! This cake screams fall! This is all you need to get into your comfort zone cherishing each and every bite!
    I received samples from Dixie Crystals sugar and Milican Pecans to develop recipes and the views expressed are my own. Dixie Crystals pure granulated sugar is best in quality and I love using it in many recipes and desserts.     There are so many convincing reasons to make this cake.
    Delicious - This is a very tasty cake!
    Comforting warm spices - cinnamon, ginger, clove, and nutmeg give warmth
    Satisfying - This gives the utmost satisfaction of dessert!
    Coconut and pecans - The coconut flour, coconut milk, toasted coconut, and pecans give the nutty flavor and crunch!
    Caramel - Caramel bits and homemade caramel sauce gives the luscious bite!
    Healthy - Apples, nuts, raisins, and coconut give nourishment! Healthy!
    Eggless cake
    This is a perfect fall dessert! 

    I like the ginger-coconut combo and hence added it here. In case you want to omit ginger, it works too. Unsweetened coconut flakes are used here. I ran out of it, so grated some fresh coconuts and toasted it, and used in this recipe. Frozen shredded coconut can be defrosted, toasted and used. It works and I always prefer to use it this way for Dilkush/Coconut Buns!
    This recipe uses honey crisp apples. Play around with your favorite apple for different flavors. I have grated the apples as my picky eater will not "see" the fruit inside. Apple chunks also work in this recipe and I love the bite of chunks here and there. Pecans or walnuts can be used. 
    Caramel bits are also added in the cake batter. That gives a ooey gooey caramel pocket here and there which is divine. Nuts can also be added to the toppings. The homemade caramel sauce on top with toasted coconuts takes this cake to another level. With Dixie Crystals Sugar, it is easy to make the perfect and delicious homemade caramel sauce.

    The homemade caramel sauce gives top notch flavors to this cake! When serving this cake, add a drizzle of homemade caramel. This is just DIVINE! Store-bought caramel sauce can also be used if you prefer to use it.

    When your apple tree is loaded with apples, you can make this apple butter or apple pie. Or use them in this lassi or this unique boba tea! Apple Butter muffins or blondies are great to indulge in. A delicious apple cake makes every occasion special. Even an ordinary day is elevated to a special "treat yourself" day! Don't you agree? Apple, cinnamon and other warm spices, pecans, and coconut make this the most perfect in flavors.
    This recipe also uses applesauce. Applesauce helps keep the cake moist and works to make cakes with reduced fat. This recipe uses only four tablespoons of butter. Apple sauce also helps in good texture and crumb in eggless cakes and it is one of my go to options to include in many cake recipes. This month Sneha is hosting an event in our #BundtBakers group and she suggested we make bundt cakes with applesauce. This is a perfect cake in flavors and is loaded with apples, apple sauce, and...... all the flavors! I am sharing this loaded cake for this event.

    Ingredients
    All-purpose flour - 1 and 1/4 cup
    Coconut flour - 1/4 cup
    Corn starch - 1 tbsp
    Baking powder - 1 tsp
    Baking soda - 1/2 tsp
    Salt - 1/4 tsp
    Cinnamon powder - 1/3 tsp
    Nutmeg - a pinch
    Cloves - a pinch
    Ginger powder - 1/4 tsp
    Coconut - 1/3 cup, shredded, toasted
    Raisins - 1/4 cup
    Caramel bits - 1/4 cup
    Pecan - 1/4 cup, chopped
    Apple - 3/4 cup, shredded
    Dixie Crystals sugar - 1/2 cup
    Brown sugar - 1/4 cup
    Flaxseed powder - 2 tbsp
    Milk/Coconut milk - 1/2 cup
    Aquafaba - 3 tbsp
    Unsweetened applesauce - 1/2 cup
    Butter - 4 tbsp
    Vanilla - 1 tbsp
    For Caramel Sauce
    Dixie Crystals Sugar -1/2 cup
    Butter - 2 tbsp
    Heavy cream - 1/4 cup
    Method
    Add milk to flaxseed powder in a small bowl and set aside for 5-10 minutes to gel. Preheat the oven to 350 degrees F.
    Add the dry ingredients to a bowl, mix and set aside.

    Add the brown sugar, Dixie Crystals sugar, butter and vanilla to a bowl. Cream it and the add the aquafaba, flaxed egg, and apple sauce. Beat until light and fluffy.

    Add the flour in three to four batches and beat to a smooth batter.

    Fold in the raisins, toasted coconut, pecans, shredded apples, and caramel bits.

    Pour the cake batter to a greased and flour dusted 7-in bundt pan.

    Bake at 350 degrees F for 39-40 min. Check for doneness by toothpick test. Remove from the oven and set aside to cool completely

    While it is cooling, make the caramel sauce.  Heat the Dixie Crystals sugar in a thin layer in a pan over medium heat. Slowly, the sugar will melt form amber colored liquid. When this happens do not disturb the sugar. When it has melted completely, stir once and add the butter whisking carefully as it may bubble up and raise to the top.

     Then add the cream, mix carefully as this will bubble and boil. Once completely mixed, boil for 30seconds to a minute. Cool completely. 

    Drizzle the caramel sauce on top of the cake reserving a little to serve with cake.
