Eggless Lemon Lavender Cupcakes #SpringSweetsWeek

This is a tasty and delicious, eggless cupcakes with lovely lemon and lavender flavors and with a lemon honey cream cheese frosting! This speaks for itself with its layers of flavors.

I received Meyer lemons from Melissa's Produce, Dixie Crystals pure granulated sugar, Lemon and Lavender extract pastes from Taylor & Colledge, and tulip sprinkles from Sweets and Treats! These are amazing and quality products that will give amazing and perfect results every time. From the moment I saw tulip sprinkles, my heart was set on this cupcake. I love Sweets & Treats collection of sprinkles that are unique too! I have used their carrot sprinkles in this Oatmeal Carrot Halwa Icecream Sandwich.

Lemon and lavender is a wonderful combination! DIVINE pairing! I have used lemon and lavender extract pastes from Taylor and Colledge in the cake. These two pastes are a big help while baking eggless cakes. The wet to dry ingredient ratio is very important as the eggs that give structure are not used here. The pastes add beautiful and exact flavors and would recommend these for delicious lemon lavender cakes. I have also used Melissa's Meyer lemon zest for bursting flavors! The zing factor! YUM!

These cupcakes are piped with lemon honey cream cheese frosting. Yes! it sounds super amazing! Anything with cream cheese frosting will taste divine. With a hint of honey and Meyer lemon, this is the best of all!

The flavors in this cupcake are perfect for the season! And with the perfect sprinkles, these flower themed cupcakes are the option for Spring or any entertaining. This cake will not fail you!

This eggless cupcake is made with Greek yogurt and has amazing soft and fluffy texture. You can find yet another soft cake with regular yogurt here. Generally, I use Greek yogurt, regular yogurt, condensed milk, aquafaba as some of the egg replacing agents. This Eggless Honey Meyer Lemon Bundt cake uses condensed milk. Meyer lemon is the perfect choice to make lemon flavored desserts and this cake as well as the bundt cake have bursting flavors of this delicious lemon.

Pour about two thirds the cavity of a lined cup cake tray.

Bake for 16 minutes. Cool completely. In the meantime, add all the ingredients for frosting to bowl and beat until fluffy and light.

Transfer the frosting to a piping bag and pipe swirls on the cupcake. Add tulip sprinkles on top! Serve.
