Jam pinwheel cookies are simple and easy to make. They are tasty and always a superhit. Whenever I make these, they get empty in a flash. A couple of years back I made a couple of batches for a Pokemon themed birthday party, and they got emptied in a flash. Any fruit jam can be used. I usually make strawberry jam or mixed fruit jam. When figs are in season, I make a few batches of fig jam and would be making this home. I had a jar of mixed fruit jam that I made a couple of months and used to make these cookies. It is necessary to roll them and refrigerate for at least 2 hours and then slice. The slicing would be easier and the jam won't squeeze out. Anywhere around 1/3 to 1/2 cup jam could be used, just your preference. I like the chewy bite of jam and hence use half cup always.
All-purpose flour - 2 cups
Butter - 1 stick or 1/2 cup
Sugar - 1 cup
Milk - 1/4 cup
Vanilla - 1 tsp
Salt - 1/8 tsp
Baking powder - 1 tsp
Mixed fruit jam-1/2 cup
Method
Cream the butter and sugar. Add the milk and vanilla. Beat well. Slowly add the dry ingredients and make a dough.
Cool the cookies on a cooling rack. Serve and store in an airtight container.
