    Jam Pinwheel Cookies #BakingBloggers

    Jam pinwheel cookies are simple and easy to make. They are tasty and always a superhit. Whenever I make these, they get empty in a flash. A couple of years back I made a couple of batches for a Pokemon themed birthday party, and they got emptied in a flash. Any fruit jam can be used. I usually make strawberry jam or mixed fruit jam. When figs are in season, I make a few batches of fig jam and would be making this home. I had a jar of mixed fruit jam that I made a couple of months and used to make these cookies. It is necessary to roll them and refrigerate for at least 2 hours and then slice. The slicing would be easier and the jam won't squeeze out. Anywhere around 1/3 to 1/2 cup jam could be used, just your preference. I like the chewy bite of jam and hence use half cup always.

    When Sue announced the theme as 'Using Jams and Jellies in Baking' in Baking Bloggers, I knew that this would be my post. These cookies are addictive and are good to share with anyone. On the second Monday of the month, the participants of the BakingBloggers group share recipes for baked goods,  based on a specific theme for each month. Sue of Palatable Pastime hosts this event. Thanks, Sue!


    Ingredients
    Makes 36 cookies

    All-purpose flour - 2 cups

    Butter - 1 stick or 1/2 cup

    Sugar - 1 cup

    Milk - 1/4 cup

    Vanilla - 1 tsp

    Salt - 1/8 tsp

    Baking powder - 1 tsp

    Mixed fruit jam-1/2 cup


    Method

    Cream the butter and sugar. Add the milk and vanilla. Beat well. Slowly add the dry ingredients and make a dough. 


    Roll between two parchments to a 16x12 (1/4-in thick) sized rectangle. Spread the jam evenly leaving 1/2 to 1-in on one long side of the rectangle. Roll from the long side with the jam slowly to make a log, just like a swiss roll cake. Wrap it and refrigerate for 2-3 hours.


    Preheat the oven to 350 degrees F. Slice 1/4-in thick slices. Arrange in a baking sheet and bake for 11 minutes. Bake an extra minute if you prefer a crunchy one. 


    Cool the cookies on a cooling rack. Serve and store in an airtight container.
