Peppermint is THE FLAVOR for the holiday season. They can make goodies taste better and elevate the feelings when you have a bite or sip. It doesn't matter whether the peppermint flavor is in a cookie, cake, or a drink, they bring the festivity and cheer. There is no limit. There are many goodies that can be baked or made during this festive season. I made this triple peppermint version to enjoy the holidays as well as bring cheer to the family during this pandemic. It is perfect to bake with family and enjoy building memories of togetherness.
The triple peppermint cookies are delicious and addictive. These soft baked cookies have peppermint bark chips, sprinkled with crushed peppermint candies, and dipped in peppermint white chocolate. These are absolutely perfect for the holidays!. They are festive and flavorful - triple the time. These soft chewy cookies are addictive to adult as well as kids without any difference. They are fun and easy to make. They make perfect holiday gifts too!. I reduced the brown sugar to 2/3 cup, feel free to add 2 more tbsp for more sweeter version. Bake for a couple of minutes extra if you prefer a crunchy one.

Ingredients
All-purpose flour - 1.5 cups
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Butter - 1/2 cup or 1 stick
Flaxseed powder - 1 tbsp
Milk - 1/4 cup
Vanilla - 1/2 tsp
Brown sugar - 2/3 cup
Peppermint bark chips - 1/4 cup
White chocolate chips - 1/4 cup
Peppermint candy melts - 1 cup
Candy canes - 2-4
Method
Mix the flour, salt, baking powder, baking soda in a bowl and set aside. Add milk to the flaxseed powder and set aside for 10 minutes to gel. In another bowl, cream the butter and brown sugar. Then add the flaxed egg and vanilla essence, beat well. Slowly add the flour and make into a cookie dough. Add the white chocolate chips and peppermint bark chips, fold well.
Scoop with cookie scooper and roll into a ball. Flatten them. Sprinkle with crushed peppermint candy on each cookie but only over half the cookie. Bake for 8 minutes. Remove from the oven, cool on a cooling rack.
Melt the peppermint candy melts by heating in microwave for 1 and 1/ 2 minutes. Mix evenly. Dip the half of the cookie that doesn't have any peppermint sprinkles into the peppermint candy melt. Let it set on a parchment or wax paper for 15 minutes.
Store in an airtight container.
