    Tofu Avocado Toast

    This is a delicious and nutrition loaded toast that is simple to make. A perfect toast topped with mashed avocados and pan fried tofu, drizzled with sriracha Mayo is a quick and tasty meal to start the day.


    Why is this avocado tofu toast so great?


    Avocado toast can be made in many ways. This toast is easy, delicious, nutritious, and the best part is that the individual components can be made ahead. Guacamole can be made ahead or store-bought ones can be used. Tofu can be marinated quickly and pan-fried, or make this ahead and reheat it in the morning. Add everything to your toast and that makes the morning pleasant without any tension or stress. Simple and great way to start the day, right?


    Ingredients required to make this toast are:

    Sourdough bread - I am a great fan of sourdough. Plus a toast with the crusty loaf also holds the toppings well. Any crusty loaf can be used in the recipe

    Avocado/guacamole - The start of the toast. Creamy avocado makes the toast heavenly and filling and is loaded with good nutrition. We love guacamole and I always have a tub ready in the fridge for quick meals.  Along with the garlic, cilantro, salt, and lime, guacamole boosts the flavor of the toast. Keep it chunky or smooth. As guacamole can be made ahead, it makes mornings easier. I prefer to use my homemade guacamole, but store-bought guacamole can be used too. Slices of avocados can be used or they can be mashed slightly on the toast.

    Tofu - This gives the protein that is essential to kick start the day. The marinade is made with gochujang, ginger, and garlic. This is so tasty! Marinade it overnight and panfry in the morning, or make it ahead and reheat on the pan when serving.

    Alfalfa sprouts - I am a huge fan of these sprouts. These sprouts loaded with good micronutrients find a spot in our sandwiches and wraps. This is optional but I highly recommend this as this is a good source of nutrition.

    Sriracha Mayo - A drizzle of this perfectly balances and elevates the flavors.

    Cilantro - Boosts flavors.


    Corn flour - This helps in crispy tofu.


    Sesame seeds - Adds nutty flavor


    Marinade - The simple marinate is made with spicy gochujang paste, ginger, garlic, lemon juice, and brown sugar.


    Oil - to pan fry the tofu.


    This simple avocado is a trending recipe for quite some time. Though it is a staple here for any meal, it never came to the blog. This week I am sharing this simple avocado toast for Blogging Marathon under the theme “Trending Recipes” and my earlier share was the Rose Rasmalai Crinkle, rose and rasmalai spin on the viral crinkle dessert.

    Ingredients
    Makes 5-6
    Sourdough Bread slices - 5 -6
    Guacamole - 1 to 1.5 cups
    Alfalfa sprouts - 3/4 cup
    Tofu - 16oz, pressed, cubed
    Gochujang - 1.5 tbsp
    Brown sugar - 1 tbsp
    Lemon juice - 1 tsp
    Ginger - 1 tsp, chopped
    Garlic - 1 tsp, chopped
    Corn flour - 2-3 tbsp
    Sesame seeds - 1 tbsp, toasted
    Cilantro - 1 tbsp, chopped
    Sriracha mayo - 1/3 cup
    oil - 3 tbsp
    Method
    Add the gochujang, lemon juice, ginger, garlic, brown sugar and mix. Add the tofu to coat well. Set aside for 10-30 minutes.
    Transfer the tofu pieces to a plate. Sprinkle the corn flour to coat the pieces.
    Heat oil in a cast iron pan. Add the tofu pieces, Fry for 2-3 minutes. Flip and cook until the tofu is crispy on all sides. This may take another 2 minutes. Drain in a paper towel and set aside.

    Toast the bread slices on a pan, or toaster, or in the oven.
    Spread the guacamole on avocados. Add alfalfa sprouts.

    Add tofu pieces. Drizzle with sriracha mayo.
    Serve immediately.

      The toast looks interesting, with avocado and tofu.The sourdough bread itself tastes excellent and with these flavours it must be making a super snack.
      Can you store guacamole? I always make it fresh as it turns brown, in spite of storing it in a glass jar and covering it well. If you have some tips on storing, do share.

      Thanks! Guacamole tends to change color when it comes in contact with air. I store it in a glass container with a saran wrap touching surface of the guacamole so that there is no air and then seal it. One of my friend suggested to keep the pit in the guacamole and follow that too. This helps in keeping its color unchanged for 24-36 hours. When I make for lunch or dinner, I keep it packed for breakfast or brunch too. I would as well update it in the post too. Thanks again for visiting the blog.
