Si Chet Khao Swe is a popular noodles from Myanmar. In simple words this is garlic oil noodles. My recipe is vegan version of the original noodle. My version uses soy granules in place of chicken and plain noodles instead of egg noodles.
Soy chunks and granules are available in all stores. I have used granules. If using chunks, cut it into smaller pieces once it soaks and then use in the recipe.
This meal can be made ready in under 30 minutes. Amazing, right? Simple and comforting meal in less time is always a winner. While noodle cooks, get the soy granules ready and the preparation of garlic oil takes 2-3 minutes. Using a garlic press makes it easier instead of finely mincing by hand. Peanut oil is traditionally used and it imparts amazing flavor.
Once everthing is ready, its only the assembling. Top the noodles with how much you desire. Very simple! I have heard from my mom and grandma about "ennai sadam" (oil rice). This noodles is oil noodles flavored with garlic. Very satisfying taste. Add black pepper or sliced Thai chili for heat.
I followed the video of Burmese Dishes and Burmese Home Cooking and made a vegan version substituing for chicken and egg noodles. I saw a variation of this with broth in Great British Chefs which sounds amazing too!

For garlic oil
Peanut oil - 2/3 cup
Garlic - 6 to 8 cloves, finely minced
Turmeric - a pinch
For "Vegan meat"
Soy granules - 1 cup
Water - 1/4 cup
Soy sauce - 3 tbsp
Galic - 2 cloves, finely minced
Black pepper powder - 1/2 tsp
For Garnish
Green onions - 1/4 cup, chopped
Method
Heat the peanut oil and add the garlic and fry till golden brwon. Switch off the flame, add a pinch of turmeric. Transfer to a bowl.
Soak the soy granules in quarter cup water and in a couple of minutes, it would swell up.
Heat a teaspoon oil in a pan, add the garlic, soaked saoy granules, soy sauce, black pepper powder, and cook for about 4-5 minutes till it is cooked and has absorbed all flavors.Set aside.
Cook the noodles according to package direction, drain, and set aside.
For assembly: Add noodles to the bowl. Add two tablespoons of soy mixture, 2-4 tablespoons of garlic oil, green onions, and Thai chili (if preferred).
Serve immediately
