    This easy to make apple snack cake is a soft, moist, and tender vegan cake with chunks of fresh apple in every bite, cozy cinnamon, and with the perfect touch of sweetness! This simple snack cake is your comforting and ideal fall bake perfect to satisfy all your sweet cravings.

    The simple answer is this cake is simple and cozy! With no fancy ingredients and no tedious procedures, this simple yet tasty cake brings all the comfort you want in a bite. It is just wholesome ingredients and warm spices! Just cozy and comforting! This cake screams fall in every bite.

    This apple snack cake, as the name says, is perfect for anyday and everyday too. It is lightly sweet and soft and is totally addictive.

    There is tons of apples in this cake in the form of apple sauce and apples. The juicy apple pieces keep the cake moist and tender. And adding flavor to the cake as well.

    You can have this cake as such and it doesn't need any icing. However, if you prefer you can dust with powdered sugar or drizzle with caramel syrup. Or even add a streusel topping making it a delicious breakfast coffee cake. The options are limitless as you can add delicious creamcheese or caramel frosting for that extra dessert touch. Make any occasion special with this easy apple cake.

    Finally, this cake is vegan. The added silken tofu (instead if eggs) makes the cake even softer. This cake is perfect to serve for any crowd, any occasion.

    Ingredients

    To make this delicious fall apple snack cake, you will need the following ingredients:

    All purpose flour - gives the structure to the cake as it forms the base.

    Brown sugar and sugar - sweetens the cake. This recipe uses a mixture of brown sugar and sugar. The brown sugar gives a deeper color and adds a flavor depth.

    Vanilla - enhances the flavor and aroma

    Apples - the star of the cake. This recipe uses Granny Smith apples.

    Silken tofu - the egg substitute in the recipe. It also adds proteins.

    Baking soda and baking powder - leavening agents

    Apple cider vinegar - makes the cake even fluffier as it reacts with baking soda.

    Cinnamon - perfect flavor pair with apples and adds warmth to the cake.

    Apple sauce - results in a moist cake.

    Oil - any neutral flavor oil will work in this recipe.

    What type of apples to use in this recipe?

    This recipe uses Granny Smith apples. This variety holds the shape when baked. Basically ,you can use the apples that you will use to bake a pie like Granny Smith, Braeburn, Jonagold etc. Honey crisp may work too. If you have any of these trees in your baackyard, you can just pick the apples and bake this easy apple snack cake.

    Servings

    This recipe makes two 9-in pans which is great making 24 servings. However, you will be tempted to go second helping very easily as iot is light and tasty. Plan accordingly when you bake this cake as this apple snack cake is great as a dessert as well as a snack. Pack for lunch as a small treat.

    Storage

    You can store this cake for upto 4-5 days in the refriegartor. Remove the cake from the fridge an hour before when you serve so that it comes back to the room temperature. I haven't tried freezing the cake, it gets empty pretty soon here.

    Pan size adjustments

    You can use two 9-in round pans to bake the apple snack cake as per the recipe. Instead, use two 8x8-in square pans. However, you can also bake it as a single cake with a 9x13-in pack.

    Apple Snack Cake

    Ingredients

    • 2½ cups All purpose flour
    • ¾ cup Oil
    • ½ cup Brown sugar packed
    • 1 cup Granulated sugar
    • ¾ cup Silken tofu
    • 3 cups Granny Smith apples peeled and chopped
    • 2¼ tsp Cinnamon
    • 1¾ tsp Baking powder
    • ¾ tsp Baking soda
    • ½ tbsp apple cider vinegar
    • 1¼ cup apple sauce unsweetened
    • ½ tsp Salt
    • powders sugar to dust optional

    Instructions

    • Preheat the oven to 350℉
    • Blend the silken tofu to a smooth consistency.
    • Grease and line two 9-in round baking pans.
    • Add the flour, salt, cinnamon, baking powder, and baking soda to a bowl. Combine thoroughly.
    • To another bowl add the apple sauce, blended tofu, sugar, brown sugar, oil, and vanille. Beat well.
    • Add the flour mix slowly in three batches to the wet ingredient mixture and beat well making sure there are no lumps.
    • Add the apple cider vinegar and mix well.
    • Fold in the chopped apples.
    • Divide the cake batter equally into the two baking pans.Bake at 350℉ for 32-33 minutes, until the inserted toothpick comes out clean. Remove from the oven, cool completely.
    • Transfer to a serving plate. Dust with powdered sugar or slice and serve as such.
