Preheat the oven to 350℉
Blend the silken tofu to a smooth consistency.
Grease and line two 9-in round baking pans.
Add the flour, salt, cinnamon, baking powder, and baking soda to a bowl. Combine thoroughly.
To another bowl add the apple sauce, blended tofu, sugar, brown sugar, oil, and vanille. Beat well.
Add the flour mix slowly in three batches to the wet ingredient mixture and beat well making sure there are no lumps.
Add the apple cider vinegar and mix well.
Fold in the chopped apples.
Divide the cake batter equally into the two baking pans.Bake at 350℉ for 32-33 minutes, until the inserted toothpick comes out clean. Remove from the oven, cool completely.
Transfer to a serving plate. Dust with powdered sugar or slice and serve as such.
