This is a simple, sweet, and delicious salad made with oranges and mixed greens with bold citrus flavors drizzled with Orange Balsamic Vinaigrette . The orange from both salad and dressing makes it divine. This is vegan too. This is one of the best way to eat fresh veggies from farmers market or from your local stand.
Mixed greens provide excellent vitamins and antioxidants and this is a very healthy salad. The cucumbers and toasted nuts give the crunch with lovely bites of sweet grape tomatoes. This salad is perfect for summer or for any day.
The orange balsamic vinaigrette enhances the flavor of the salad and us very simple to make. The dressing can be stored in the fridge for 4-5 days and is great for make-ahead options.
Mixed greens will always be there in my bag after farmers market trip along with different kind of peppers, tomatoes, and squash along with season’s fruits. We love the oranges from farmers market and would always get a bag. Sometimes at the closing time, they give for a couple of dollars less too! Those oranges are SWEET! If you love salad, this orange and greens salad is a great choice. Quick veggie salad is another one that can be fixed in a jiffy to add more fresh veggies in your meal. Ingredients
For the salad
Mixed greens - 5 cups
Navel orange - 1, peeled and chopped
Cucumber - 1 cup, half moon slices
Grape tomatoes - 1 cup
Black olives - 1 cup, canned
Red onions - 1/2 cup, sliced thin
Walnuts - 1/3 cup, toasted
For the vinaigrette
for the above mentioned salad quantity, half the quantity of this vinaigrette is required or drizzle as per preference.
Orange juice -1/4 cup
Balsamic vinegar - 3 tbsp
Olive oil - 1/3 cup
Salt 1/2 tsp
Black pepper - 1/2 tsp
Bruschetta seasoning- 1/2 tsp
Maple syrup - 1 tsp
Method
Add the ingredients for the vinaigrette in a bowl and whisk well.
In a big bowl, add the salad ingredients.
Drizzle the orange vinaigrette.
Serve immediately.
