Ingredients to make churro cinnamon roll focaccia
All purpose flour - this is the base of the focaccia.
Sugar - to activate the yeast
Salt - adds flavor
Water - to knead the dough.
Butter and olive oil - Focaccia is a bread that is made with olive oil only. Since this is a sweet cinnamon focaccia, this recipe uses a combination of butter and olive oil. The butter yields soft texture while olive oil gives the characteristic focaccia.
Active dry yeast - leavening agent used. If using instant yeast, activation step is not required.
Selefina Spices Cinnamon - The best cinnamon powder gives the perfect aroma and flavor that gives you nostalgia of your favorite cinnamon bun when you have this focaccia. If you do not have this brand, you may use what you have on hand.
Taylor and Colledge Vanilla extract paste - This paste is easy to use with the perfect bolt of vanilla flavor. You may substitute with vanilla that you might have on hand.
Brown sugar - This recipe uses light brown sugar. This yields the characteristic sweet filling combined with cinnamon that results in the sweet and addictive focaccia.
Cream cheese - Adds protein as well as the tart flavor of cream cheese balances with sweet bread.
Powdered sugar - this sweetens the cream cheese icing.
Milk - This facilitates in making the smooth icing for the cinnamon focaccia.
Working with the dough
Focaccia dough is made with 70% hydration. Therefore it is best to measure the weight in grams and then make the dough. I did the conversion from grams to cups after measuring in the recipe card. Hence, you could use as such or measure the grams and work.
Since it is sticky dough, while shaping as well as making dimples, dip your fingers in water or water-oil mixture for easy workability. This makes baking bread or focaccia at home simpler.
What size pan to use?
This bread can be made in a 7x11-in or 8x8-in pan. This gives the perfect height. If you bake in a different or larger size pan, the focaccia may be thinner and hence you might want to watch on the baking time. When you can smell the amazing aroma of cinnamon and the crust is golden it is time to take the focaccia out.
In addition, you can also insert a toothpick and check for doneness. Also, you could use a thermometer to check the interior temperature of the bread. An interior temperature 190-200 degrees F indicates the focaccia is done.

These are great to store at room temperature for a day. Since it has cream cheese icing, I would recommend storing it in the refrigeratir for extended shelf life. When needed, just leave it outside to come to room temperature or keep for a few minutes in a warm oven and then serve.

Churro Cinnamon Roll Focaccia
Ingredients
For the dough
- 2¼ Cup All purpose flour
- 3 tbsp Butter melted
- 3 tbsp Olive oil
- 1 tsp Active dry yeast
- 1 cup minus a tbsp Water lukewarm
- 2 tbsp Sugar
- ½ tsp Salt
For Cinnamon Sugar
- 1½ cups Brwon sugar
- 1½ tsp Cinnamon
- 3 tbsp Butter melted
- ½ tsp Vanilla extract paste
For Cream Cheese Icing
- 4 tbsp Cream cheese room temperature
- ½ cup Powdered sugar
- ¼ tsp Vanilla extract paste
- 1 tbsp Milk
Instructions
- Activate the yeast with warm water. Add te flour, salt, and acated yeast to a bowl and mix to make a shaggy dough. Add the butter and fold 10 times. Prove for 2 hours until doubled in size.
- In the meantime, mix brown sugar, melted butter, vanilla extract paste, and cinnamon powder. Set aside.
- Take a 7X11-in tray and add the olive oil. Transfer the dough ad gently spread to the entire tray.
- Sprinkle two thirds of the cinnamon sugar on the dough. Make a three way fold from both the edges to the center from the shorter side. Set aside to prove for 40 minutes.
- Preheat the oven to 450℉. Make dimples with your finger spreading the dough to the entire container. Sprinkle the remaining cinnamon sugar. Bake at 450℉ for 22-23 minutes until golden brown and crispy on top.
- Remove from the oven and cool for 20 minutes. In the meantime, whip the cream cheese, vanilla extract paste, powdered sugar, and milk.
- When the focaccia is cool, smear the cream cheese icing on top.
- Slice and serve with coffee, tea, or milk.
