    This pomegranate pani puri is a vibrant fall twist to the classic Indian street food, Pani puri.

    Why pomegranate pani puri?

    Pani puri is a beloved Indian street food made of crisp, hollow puris filled with spicy, tangy water (pani), mashed potatoes, chickpeas, and chutneys. The explosion of flavors and textures in your mouth is simply fantastic!

    Pomegranate pani puri adds a refreshing twist to the classic street snack. The sweetness and crunch of pomegranate balance the tangy, spicy flavors perfectly.

    Ingredients

    To make thois delicious and vibrant colored pomegranate pani puri, you will need the following ingredients:

    Puri - Bite size puffed semolina puri for pani puri is available in Indian stores. That option makes it easy for entertaining though you can make it at home too.

    Pomegranate- This apple should be the choice as it imparts the tart flavor.

    Lemon juice - This adds the sour flavors of the pomegranate pani equivalent to the traditional tamarind based one.

    Black salt and pani puri masala - these are available in Indian stores. These impart classic flavors to the pomegranate pani.

    Salt - gives flavor.

    Mint and cilantro - boosts the aroma and flavor and give the characteristic refreshing flavor to the pani aka flavored water.

    Moong sprouts - This gives texture as well as adds to the protein of the snack. It is easy to make it at home, however store-bought moong sprouts can also be used.

    Garbanzo beans - Adds to the meaty texture and protein. This recipe uses cooked sprouted dark garbanzos aka kala channa. Regular garbanzo will also work in this recipe.

    Potatoes - spicy potato filling adds to the flavor. Gold potatoes are used in this recipe. Any type of potato will work.

    Cumin and coriander powder - boost the flavor of the potato filling imparting layers of flavor.

    Onion - finely chopped onions are a great topping. This is not used in this recipe but is commonly used in pani puri. You mau include as you wish.

    Sev or boondi - deep fried garbanzo snacks adding to the texture and protein.

    Servings Suggestions

    This pomegranate pani puri, with a fruity, tangy, spicy flavor profile is a tasty snack. Kids and adults will love it equally than any other dishes on the menu. This pani puri should be served immediately else it becomes soggy. You can have a snack bar, and the guests can make it themselves. That is totally fun!

    Storage

    I serve this pomegranate pani puri (for that matter any pani puri)immediately as the flavored pani will soak the puri. But you can make the pomegranate pani, potato filling, sprouts ahead and refrigerate them if you are making for a larger group. Justcassemble it before each serving.

    Ingredients

    Pomegranate Pani

    • 2 cups Pomegranate arils
    • 2 cups Water total juice 2/3/4 cup
    • 2 tbsp Lemon juice
    • ⅛ tsp Salt
    • 2 tsp Pani Puri masala
    • ½ tsp Coriander powder
    • 1-2 Thai chili
    • ½ tsp Cumin Powder
    • ⅓ tsp Black salt
    • ¾ cup Mint packed
    • ½ cup cilantro packed
    • ½ cup Water

    Potato

    • 250 g Potato
    • ¼ tsp salt
    • ⅙ tsp Black salt
    • ½ tsp Cumin powder
    • ½ tsp Coriander powder
    • ⅛ tsp cayenne

    To Assemble

    • 7.5 oz Pani puri
    • ½ cup Pomegranate arils
    • ⅔ cup Garbanzo beans cooked
    • ½ cup Onion finely chopped
    • ½ cup Boondi/sev
    • 2 tbsp cilantro
    • ¼ cup Sprouts

    Instructions

    • Blend the pomegranate with two cups water and set aside the juice after straining.
    • Blend cilantro, mint, black salt, cumin powder, lemon juice, chaat masala, pain puri masala to a coarse texture. Add half cup water and blend to a nearly smooth puree. Add this to the pomegranate juice. This is the pani to fill the puri.
    • To make the potato filling: Add the spices listed under pottao filling to the cubed mashed potatoes. combine thoroughyl. Set aside.
    • To assemble: Poke a hole in the puri. Add half a teaspoon of potato mixture, a couple of garbanzos, some sprouts, onions, and top with sev, pomegranate and cilantro. Repeat with the rest of the puris. Pour about 3 tablespoons of pomegranate pani to fill the puri.
    • Serve immediately
