This is the most easiest vegan comfort meal that is a quick one and is also the tastiest one with amazing textures. This has all the flavors that could brighten up your day!
This is one of our go to meals. Tofu scrambles is a quick one and is a great breakfast option. With a few more add-ons, this tofu scramble bowl is one of the tastiest meal perfect for any day. This is a perfect one to make when you have vegan guests and the Paneer Burji, scrambled paneer is also a great option to make if you are making a vegetarian version. This scrambled tofu is also great to make a wrap or a sandwich.
To make this bowl, all you need is a few things and they are not at all fancy. Just regular pantry or fridge essentials. There are no right or wrong add-ons here. Throw in a few fresh veggies and make it a hearty meal.
Tofu - Obviously, you'll need tofu to make this tofu bowl. There is no need to press the water out of tofu and this recipe works from soft to firm tofu.
Grain - Brown rice, regular rice, quinoa, or any leftover cooked grains can be added. Pasta is also an option and I like it with orzo or couscous. To make a grain free version, use cauliflower rice.
Kochumber - This is an Indian version of cucumber, tomato, onion salad with salt and lemon juice. This gives a tasty crunchy salad with some acidity.
Sprouts are optional but add to the nutritional profile. Any sprouts can be added.
Veggies - blanched broccoli or cauliflower, bell pepper, corn or any other veggies of your choice can be added.
Sauce - Chutney mayo made with green cilantro mint chutney is used. Green chutney alone or siracha mayo also works. I have used Vegannaise here. Squirts of siracha alone works too.
Nuts - Nuts add to the texture as well as proteins. I have used toasted peanuts, any nuts of your choice can be used.
Tofu is a protein rich plant based food that is often used in our home whether making this Tofu Paratha, which is great for any meal, or Vegan Mapo Tofu, or Black Pepper Tofu, or any soups. Tofu Paratha uses another version of tofu scrambled, this version will also work great there. This scrambled tofu bowl is easy to make and is comforting that you can make for yourself as well as for guests easily. Ingredients
Serves 2-3
For Scrambled Tofu
Oil - 1 tbsp
Onion - 1/3 cup, chopped
Cumin - 1/2 tsp
Garlic - 1 tbps, finely chopped
Ginger - 1 tbsp, finely chopped
Tomato - 1/3 cup, chopped
Bell pepper - 1/3 cup, chopped, any color
Peas - 3 tbsp, fresh or frozen
Thai chili - 1, finely chopped
Tofu - 8oz., pressed
Salt - 1/3 tsp
Turmeric - 1/8 tsp
Cayenne - 1/4 tsp
Garam masala - 1/4 tsp
Cilantro - 1 tbsp, chopped
For the Bowl
Brown rice - 1 cup, cooked
Kochumber - 3/4 cup
Broccoli - 1 cup, blanched
Sprouts - 1/4 cup
Peanuts - 4 to 6 tbsp
Chutney Mayo - 3-6 tbsp
Method
Heat oil in a pan and add the cumin followed by ginger and garlic, sauté for 30 seconds. Add the onions and sauté for 3- 5 minutes until they turn translucent.
Add the tomatoes and bell pepper, cook for 2 minutes. Add the frozen peas, salt, cayenne, turmeric, and garam masala, followed by tofu. Mix and break the tofu into smaller pieces and continue to cook stirring often for 4-5 minutes to make the scrambled tofu.
Add cilantro to the tofu mixture and mix.
To assemble: Add one-third quantity of tofu, grain, and kochumber to bowl followed by the rest of the ingredients. Drizzle the sauce or add in the center, garnish with extra cilantro and serve.
