    Granadir or Grenadier is the most comforting and tasty meal that you can make with pantry staples! This is a quick and easy vegan version.

    About this granadir

    Many times you make a meal with what you have on hand and that's how I made this pasta once and it became a staple. I would add the herbs I have on hand, or peas too! Little did I know that this was a common peasant food in Slovakia!

    Slovakia, the Slovak Republic is a landlocked country in Europe. It is surrounded by Poland to the north, Ukraine to the east, Hungary to the south, Austria to the southwest, and the Czech Republic to the northwest. The cuisine of Slovak has a heavy influence by its neighboring countries, especially Austria and Czech. As a part of my exploration, I tried and enjoyed a couple of dishes from this country. We loved the garlic and potato soup too.

    You can tweak this granadir recipe as you wish. Use any leftover potatoes or pasta in this amazing recipe. This is a great way to turn the leftovers into an amazing meal. This meal is just like having potato curry mixed with pasta. This is so popular as potato pasta in our home. Adjust the cayenne or paprika according to your taste preference.

    You can either cook the potatoes along with sautéed onion, like how we do our traditional potato curry. If you are in time crunch, boiled potatoes can be added too, just like in this recipe. This recipe is so forgiving that it allows variations without compromise on comfort.

    I make this vegan version often of granadir (skipping the ham) and hence use oil. You can use butter instead.

    Onion and potato mixed with cooked grains or pasta or even stuffed in a sandwich makes an amazing meal. For an easy weeknight meal, this would be a great option.

    If you are conscious about the carbs, swap with a high protein pasta like quinoa or garbanzo pasta. We love that version too.

    Ingredients

    To make this comforting granadir, you will need the following ingredients:

    Onion - you can use any type of onions.

    Pasta - This recipes uses macaroni. You can use any pasta shape. Use garbanzo pasta for a protein rich meal

    Oil/butter - to cook onions and potatoes. Use oil for vegan option.

    Paprika - adds a spicy kick. Adjust as per taste tolerance. You may substitute with cayenne if you do not have cayenne.

    Salt - gives flavor

    Water - to cook pasta

    Serving Suggestions

    This granadir is a comforting meal by itself. You can serve it as such. However, this becomes super cozy meal when you serve with garlic bread or cheese garlicky pull apart rolls. Add a side salad, like this kochumber for an enhanced meal idea.

    This is also a simple and tasty side that you can make for any gatherings. Comfort food always ranks first as everyone will want more of it.

    Storage

    Honestly, you will not have any leftovers of this grander. if any, you can store in the refrigerator for a couple of days. reheat it on the stove top or in a microwave and serve. Leftovers are great for next lunch.

    Ingredients

    • 1 cup Onion diced
    • 4-5 smaller size Potatoes cooked
    • 1¼ + 2` tsp Salt
    • 2½ tsp Paprika
    • 200 g Pasta 
    • 4 tbsp Oil/Butter
    • Water to cook pasta

    Instructions

    • Cook the potatoes, and peel and chop them to half inch chunks.
    • In the meantime, cook pasta according to package directions and set aside.
      Heat oil in a pan over medium flame. Add the onions and sauté for 3-4 minutes until they turn translucent. Add the chopped potatoes, salt and cayenne, cook for another 3 minutes.
    • Add the cooked pasta, combine well and sauté for 3 more minutes.
    • Serve hot or warm.
