    Baked Feta Pasta

    This is the viral Tiktok pasta. The creamy feta along with cherry tomatoes make an excellent sauce for the pasta. This is great for dinner as requires minimum prep work. The baking does the wonderful blending of flavors. When it is baking, pasta can be cooked and tasty meal can be made even on a busy weeknight.
    Thus delicious baked dinner uses feta cheese. I like to use the block  from Whole Foods as it is suitable for vegetarians. I have used the feta block in brine and hence didn't use any salt for the sauce. Adjust according to your taste and the brand of your cheese. 
    Crumbed feta can also used to make this dish, just gather it a mass to make a block and use. Cherry tomatoes can be substituted with any chopped tomatoes too. 
    Fresh basil can also be used in place of parsley.  I like mine a little spicy and used chili flakes and extra generous sprinkles of it, add as per your taste preferences.

    Ingredients

    Serves 4 people
    Pasta - 8 oz
    Salt - 1.5 tsp 
    Water to cook pasta
    Feta cheese - 8 oz
    Cherry/grape tomatoes - 1 lb
    Garlic - 2 tbsp, finely minced
    Onion - 1/2 cup, sliced 
    Chili flakes - 1// tbsp
    Black pepper powder - 1/2 tsp
    Dried Basil - 1/2 tsp
    Parsley - 2-3 tbsp, chopped
    Method
    Preheat the oven to 400 degrees F. In a baking dish (8x11-in) add the tomatoes, onions, oil, black pepper, chili flakes, garlic, and dried basil. Toss  and make a space in the center to keep the feta cheese block. 
    Bake for 40-45 minutes till the top of the cheese is beginning to get a golden brown color and the tomatoes are blistered with the mixture bubbling. 
    In the meantime cook the pasta according to package directions and set aside.
    Once the feta cheese and tomato is ready, remove from the oven. Mash and mix thoroughly to make a cheesy sauce. 

    Add the pasta and a couple of tablespoons of pasta water. Mix thoroughly. Add a couple more tablespoons of pasta water or just water if you prefer more saucy texture. 
    Garnish with fresh parsley and serve.

      Wow! That sounds like a fantastic baked meal. I have never tried feta and tomato sauce - must try this, we are great fans of such baked dishes.

      This makes a wonderful weeknight meal or any meal as a matter of fact.. I like the way the sauce is prepared in the oven without baby sitting it. Pasta looks so creamy and delicious.
